Easy Spaghetti Carbonara Recipe

This article is one of a number of simple recipe ideas that I was inspired to write whilst travelling around Australia and New Zealand for a few weeks. We found that we could buy just a few 'store cupboard' items and make a whole weeks' worth of simple, tasty meals for very little money.

These recipes are useful to anyone who is looking to cut back on their weekly shopping budget but still wants to eat home-cooked, healthy meals each evening. This recipe and others I have written is equally useful to someone who will be planning to spend time in a caravan or campervan while on vacation.

Of course, it's not all about price and the constraints of travelling. Not everyone likes to spend ages slaving away at the stove of an evening after a hard days' work. All of the recipes that I write about are simple, quick and easy to prepare. And all very tasty and nutritious.

So lets dive into this awesome spaghetti carbonara recipe. This is a really quick and easy recipe that is perfect for dinner. It takes literally 20 minutes and only uses five ingredients (plus oil for frying) and you'll likely have most, if not all, of these ingredients in your fridge / store cupboard so there's no need to trudge out to the local shops and spend a fortune.

The Proper Italian Way

This recipe shows you how to cook spaghetti carbonara the proper Italian way, and not the rich, sickly way that you get it in most restaurants where it's made with double cream or creme fraiche. Trust me, this way is much better and it has a lot fewer calories and a lot less fat content!

When I'm at home I like to use quick dinner recipes and quite often these will be for quick pasta dishes. It's a very quick and easy set of steps that uses few ingredients and takes no time at all. When I set out on a month-long trip in a campervan last year this was one of the first dishes that I thought of making whilst on the road. You can use smoked or unsmoked bacon in your spaghetti carbonara. I prefer smoked but my girlfriend insists on unsmoked. Each to their own!

Ready in: 20 min
Yields: Makes 2 servings of delicious Spaghetti Carbonara

Meal Ingredients

  • 200g Spaghetti Pasta
  • 2 Rashers of Bacon (chopped)
  • 3 Eggs (yoke only)
  • 1 Onion (finely chopped)
  • A handful Parmesan
  • A splash Cooking Oil

If I may, I would make a couple of suggestions to the above ingredients. Firstly, try to get fresh spaghetti if it is available but there is absolutely no harm in using dried. Secondly, I would strongly advocate the use of organic eggs if you can get them. At home I normally use free range eggs (never caged) but with this dish the yoke is an important part of the meal so you want the best quality eggs that you can find. Organic taste better, trust me!

Spaghetti Carbonara in 6 Easy Steps

  1. Bring a pan of water to the boil and boil the spaghetti for 10 minutes until cooked. Add salt if required. When cooked, leave to stand in the hot water.
  2. Heat the oil over a medium heat and fry the onions gently until they become translucent.
  3. Add the bacon and stir well. Continue frying until both the bacon and onion is cooked.
  4. Drain the spaghetti and stir into the hot pan. Fry for a further 2 minutes.
  5. Turn off the heat and gently stir in the egg yokes. You don't want to scramble the eggs, the aim is to simply coat the pasta as much as you can.
  6. Sprinkle over the parmesan. Stir once and serve immediately. Add more parmesan to the dish as desired.
This is such a quick and easy recipe that I even cooked it outdoors in a park in Australia.  It was still ready in only 20 minutes and tasted just as good as if I was at home!
