CHOCOLATE TRUFFLE AND GANACHE
Chocolate truffle or ganache is a flavoured cream or frosting made with chocolate and fresh cream and is used to decorate desserts, to fill cakes or sweet and make petit fours.
Chocolate petit four truffles are made of chocolate and cream, then flavoured with rum, brandy, whisky, coffee or nuts and shaped into balls which are coated with chocolate or cocoa powder etc. They are a good accompaniment to coffee at the end of the meal.
