Crock Pot Campfire Potato and Sausage Soup
Best Soup Ever!
This soup is amazing, it's a no-fuss meal that is great for dinner, especially on a chilly night. With so many great flavors such as; kielbasa sausage, kidney beans, tomatoes, potatoes, onions, green bell pepper, and a few spices, this soup is sure to be a hit! When I make this, I usually make a garden salad and biscuits on the side. Cornbread or corn muffins are tasty with this, too! Enjoy! :)
1 can (15 ½ oz) dark red kidney beans (drained and rinsed)
1 can (14 ½ oz) diced tomatoes (undrained)
1 can (10 ½ oz) condensed beef broth
8 oz kielbasa sausage (cut lengthwise into halves, then crosswise ½ in pieces)
1 large baking potato (cut into ½ in cubes)
1 medium onion, diced
1 medium green bell pepper, diced
1 tsp dried oregano leaves
½ tsp sugar
1 to 2 tsps ground cumin
Combine all ingredients in crock pot except for the cumin. Cover and cook on low setting for 8 hours, or on high setting for 4 hours. Stir in cumin and serve.

I have always been a fan of set-it-and-forget-it recipes for the crockpot, which enables us to set the crockpot to the appropriate setting as we go on about our day and are welcomed hours later with a yummy home-cooked meal.
