Whisk vinegar, oil, oregano, salt and pepper in a bowl. Add chicken (already poached and diced), lettuce, tomatoes, cucumber, onion, olives and feta. Toss and eat fresh. It is very refreshing and has 11 grams of carbohydrates per serving.


*SPICY THAI SHRIMP SALAD;


Ingredients


1 teaspoon oil

1 teaspoon brown sugar

½ teaspoon crushed red chili

1 lb small cooked shrimp

1 medium cucumber

1 bell pepper Fresh herbs to taste


This is an extremely colorful salad, which is perfect for lunch. Whisk lime juice, a teaspoon of fish sauce, 1 teaspoon of oil, 1 teaspoon of brown sugar and ½ teaspoon of crushed red chili. To it add small cooked shrimps, cucumber, bell pepper and fresh herbs. Toss and enjoy. It has a total of 6 grams of carbohydrate.
