The other day was playing around in the kitchen with my crew putting together spices and blend flavors and we fell on to his great island flavor so I decided to try this spice blend with a few other ingredients to make a really great tasting Caribbean Chicken that was really easy to put together and super tender and juicy.
1/2 cup fresh orange juice
1/2 cup fresh lime juice
1 teaspoon of ginger powder
1 teaspoon of granulated garlic
1 teaspoon of sea salt
1 teaspoon of white pepper
1 tablespoon of imported olive oil
1 teaspoon of hot sauce
1 – 3 pound whole chicken
2 tablespoons of chopped fresh mint thinly sliced
2 1/2 green onions, thinly sliced
To begin putting this Caribbean chicken we are going to start with making the marinade for this dish keep in mind the marinade is very important to this dish because it gives the chicken so many flavors but it also tenderizes the meat.
Starting with the marinade using a shallow dish combine the orange juice, lime juice, and hot sauce place the whole chicken in a 1 gallon zip lock bag pour the marinade over the chicken seal up the bag pushing the air out of the bag then place it in the refrigerator for at least 1 hour.
Now remember were going use these methods to make these flavors in this chicken really stand out after the 1 hour of marinating remove the chicken from the marinade pat dry with a towel and sit it on the side for a few minutes so you can put the rub together.
Using a small bowl combine the salt, pepper, granulated garlic, ginger powder and blend together very well. At this point grab your chicken using the olive oil grease the chicken inside the cavity and outside of the skin now take the mint and green onions and put them inside the cavity now grab your rub mixture and sprinkle it all over the entire chicken and rub it in very well then sit the chicken inside the roasting pan.
Preheat the oven at 300 degrees give the chicken one last rub to make sure the spices are working that skin then place the chicken in the oven bake until the chicken is done at 175 degrees or until the juices runs clears from the chicken at that point remove the chicken from the oven and let the chicken rest for 15 minutes before carving then serve and enjoy.
