Carrot Sandwiches

No cooking involved and it only takes five minutes to make. How awesome is that?

This recipe uses slices of carrot as the bread and cream cheese as the filling. If you're adventuraous you could use goat cheese. These make the perfect snack for afterschool, PTA, or whatever yo uhave going on.


1/2 cup goat cheese or cream cheese, at room temperature
Salt and pepper
1 medium-size carrot, peeled and cut into thin 1/4-inch slices


  1. Put the cheese in a small bowl, and using a soft spatula or the back of a spoon, cream the cheese. Add as much salt and pepper as you would like. I'm not big on salt but I love pepper. I even had a bit of chili powder and tabasco sauce.
  2. Take two carrot slices of the same size and spread one with a heaping teaspoon or so of the cream cheese mixture, and then top it with the second carrot slice to create a "sandwich." Repeat with the remaining cream cheese mixture and carrot slices.

Seriously, it's really that easy. This would be good for a Girl Scout Patch, I think.

(Makes 4 to 6 servings )


Make these sandwiches several hours ahead of time. That way you can focus on more important things before the party or event. The best thing is, it's totally customizable. You can add spices or herbs to the cheese. It's up to you or your guests.
