Ingredients

Chick Peas, also known as Garbanzo (Kabuli Chana in India) comes from a legume family. It has various health benefits; moreover, it is tasty, nutty and easily available. Here I am sharing a very popular Indian recipe. It is sold everywhere from street vendors to 5-star hotels. It is a must have in all Indian menu, be it a wedding or birthday party. It is a rich and wholesome dish with lots of preparation required but believe me it is worth trying.

What all we need?

1 Bowl Chick Peas (Soaked Overnight)

Coriander Leaves for garnishing

For Tempering

2 tbsp Rice Bran or Olive Oil

1 tbsp Cumin Seeds

2 Big Cardamoms

2 Cinnamon Stick

2 Bay Leaves

2 Black Peppers

Spices Required

1 tbsp Red Chili Powder

1tbsp Turmeric Powder

1tbsp Garam Masala (is made up of various spices, is easily available nowadays)

2 tbsp Coriander Powder

1 tsp Chaat Masala

Salt to taste

Rock Salt (Mineral Salt with low sodium content, must be used)

For Gravy

2 Green Chilies (optional)

6 Garlic Cloves

1 inch Ginger

3 medium size Onions

3 medium Size Tomatoes

2 tbsp Tamarind Paste (optional)

Some Preparation Required

1) Boil chick peas in a pressure cooker with water, pinch of turmeric powder and salt till it becomes soft (some people also add pinch of baking soda and teabags while boiling to give it a dark colour, but I like it this way only).

2) Make paste of tomatoes, onions.

3) Make a paste of Chilies, Ginger and Garlic together

We are ready, Let’s Start

1) First of all heat oil in a pan, add cumin seeds, cardamoms, bay leaves, black peppers, and cinnamon sticks. Let it crackle.

2nd Step

Add half of red Chilli powder and Turmeric powder to the oil; it gives nice red colour and aroma to the dish.

3rd Step

Now add onion paste and sauté it for a minute. Add Ginger, garlic and chili paste. Add a pinch of salt and cook it for 5 minutes on medium flame.

4th Step

Once Onion turns brownish, add tomato paste. Cook for another 2 minutes. Add tamarind paste stir and cover it for some time. Gravy becomes reddish; now add all spices and little water.

Mash Chick peas a bit and add into the pan of all cooked ingredients. Adjust the consistency with adding water. Stir and cover it for 5 minutes. Cook for some time.

Garnish it with Coriander leaves and Serve.


Serving Suggestions

(Note: - Some people add lemon juice or anardana (pomegranate) paste in place of tamarind pulp).

This dish goes best with Rice, Chapattis, breads, parathas and bhaturas. The best part is that you can adjust spices and ingredient according to your taste.

What nutrition we get from this dish?

Chana recipe helps us to provide both soluble and insoluble dietary fibers.

It is packed with minerals like manganese, folic acids and iron.

It has protein, vitamin A, Vitamin C and Calcium.

It is good for immunity as it has ginger, garlic and tomatoes.

You would also get flavanoids, vitamin B and carotenes from tamarind paste.

We had it with rice; it was all gone in few minutes.
