Favorite Cheesy Corn Casserole
A Big Pine Lodge Favorite Dish
This is a great “make ahead” dish that you can keep in the fridge until an hour before dinner.
1 large can whole kernel corn (drained)
1 large can cream corn
1 small can (2/3 cup) evaporated milk
4 Tablespoons melted butter
½ small onion, finely chopped
½ teaspoon salt, ¼ teaspoon pepper
½ teaspoon Lowry’s seasoning
1 stack of coarsely crushed saltine crackers (about 2 cups)
12 ounces of Swiss cheese, diced into small cubes
Beat eggs and then mix in rest of ingredients. Transfer to greased casserole dish and bake at 325 degrees for 1 hour (uncovered). Let stand 5 minutes. Enjoy!
