Chicken Marinade- Greek Style

1 cup of olive oil

4 cloves of garlic, chopped fine

3 tbsp dijon mustard

3 tbsp dried or fresh oregano

2 tbsp dried or fresh thyme

1 tbsp of salt and pepper

1 tbsp dried or fresh rosemary

1/4 cup of fresh lemon juice

Mix all the ingredients together.  Pour the mixture over the chicken and allow to marinade for at least 3 hours before cooking.   If you are baking in the oven leave some of the juices from the marinade in the baking dish so all the chicken does not end up coming out dry.  Serve with rice, salad, and potatoes
