Chicken Rogan Josh

One of the popular dishes when Indians go out to eat but surprisingly not made much at home. It is not very difficult to make and of course it is fit for kings in good old days of kings. This recipe is rich in curry but when the curry goes in your mouth you can taste not only the heat of curry but also the mildness of curd (yoghurt), coriander (cilantro) and lemon. It is usually made from the meat of lamb but here we have tried to make it from chicken simply because Hindus are not traditionally meat eaters and now that many have started to eat but still eat only chicken. I hope this change of meat from lamb to chicken would be liked by readers.


Makes enough for two large portions

  1. Chicken breasts: 2.
  2. Yoghurt / Curd: 150 ml or 5 ounces.
  3. Lemon Juice: 1 lemon.
  4. Tomatoes: 4 big red chopped.
  5. Tomato puree: 2 Tbsp.
  6. Cardamom: 5.
  7. Onion: 1 big, red, diced.
  8. Cumin: grounded 2 Tsp.
  9. Dried red chili: 1 deseeded and chopped.
  10. Oil: 2 Tsp.
  11. Ginger: 1 inch piece minced fine.
  12. Garlic cloves: 4 minced fine.
  13. Salt: To taste.
  14. Coriander leaves / Cilantro leaves: chopped 1 cup.
  15. Water if needed.


  1. Wash chicken breasts thoroughly under running water so all the blood is washed off.
  2. Chop Chicken breast in medium size pieces.
  3. Now add yoghurt, minced garlic and ginger to the chicken pieces.
  4. Add lemon juice and mix everything well.
  5. Keep it in fridge overnight.
  6. Now take a pan with heavy base and heat oil.
  7. When the oil gets heated, put cardamom pods in it and heat for couple of minutes.
  8. Now add onions and sauté for a minute.
  9. Add chilies and cumin and mix well.
  10. Sauté it till onion softens. Usually takes 5 minutes in all.
  11. Now add tomatoes and tomato puree. Stir.
  12. Add coriander leaves and mix well.
  13. Now turn the heat to minimum and cook for about 30 minutes. The mixture gets stiff by now.
  14. Add chicken with its marinade. The marinade would slacken the mixture.
  15. Cook till chicken is tender. Usually takes 15 minutes or so. Check every five minutes.
  16. Add salt as per your taste.
  17. If you want the chicken grave or sauce is still too thick then add some water and bring to boil.
  18. Serve hot with roti or naan.
