Chicken Soup for the Soul
Nothing beats a cold, flu or the blues like chicken soup. There are a few ways to make it but the most important ingredient in a chicken soup is the chicken!
You do not have to make it boring and dull with adding things that you don't like into it. Keep it simple and add the vegetables that you enjoy, if you are not a fan of veggies than don't add any to your soup, just add spices and something to give it flavour.
The whole point of chicken soup is to make you feel better and it is definitely a comfort food.
There is nothing that you can take to cure a flu or a cold and once you have it....you have it, it just depends on how long you intend to stay sick that counts!
Chicken soup is good for the soul just like they say and that is the truth! Making a chicken soup is easy and it will make you feel a whole lot better a whole lot quicker!
- 1 onion, chopped
- 4 carrots, chopped
- 2 cloves garlic, cut fine
- 25 ml old brown sherry
- 125 ml oil
- 250 grams chicken, shredded
- 4 baby marrow, chopped
- half a punnet broccoli
- 1 sachet tomato paste
- 1 chicken stock cube
- to taste paprika, oreganum, black pepper
- dash salt
- 250 grams pasta shells
How to Make a Good Chicken Soup
- Chop up your onion and the carrots.
- Place oil into a pot and then add your onions and allow them to get golden brown
- Add the carrots and garlic and stir for a bit
- Add the chicken strips into the mixture with a dash of old brown sherry and let it simmer for a few minutes, while you chop up the other veggies
- Once the sherry has evaporated, add a chicken stock cube and a glass of water, stir and add paprika, oreganum, black pepper and salt
- Add the remainder of your vegetables into the mix and then add a sachet of tomato paste and a glass of water
- Allow this to simmer for 2 hours and keep adding water if need be
- 15 minutes before you take it off the stove, add small pasta shells for extra comfort
Chicken A La King
An easy and quick meal to make and it tastes so delicious!
All you need for this is chicken strips, mushrooms, green peppers and cream.
Fry up an onion with the green peppers in a dash of oil and when the onions have browned then you add in the chicken strips and cook it on a low heat until the chicken is white. Add a stock cube and mushrooms along with the cream and let it simmer until the chicken is cooked.
This dish is best served with rice and if you want to make the creamy sauce go a little further than just add a bit of milk or water to it. Don't forget to add salt and a little sprinkle of black pepper to taste.
Thai Chicken Stir Fry
I love this one because it is so quick and easy, yet very tasty. There are many recipes for this out there but I usually do not follow recipes and end up throwing in my own spices to suit my families tastebuds.
All you need for this is an onion, chicken, broccoli, carrots( flakes) bean sprouts and coconut milk.
Like most of the recipes you cut up the onion and let it cook until golden brown, then you throw in the carrots and the chicken along with a stock cube and some tumeric, salt, pepper and a little sprinkle of cayenne pepper too. Spinach is also delicious in this meal.
Add a slight bit of water to it and then throw in the broccoli, bean sprouts or whatever vegetable you choose to use. Just remember that it is great to have them crispy so try to find vegetables that won't go soggy in the mixture.
Once it has cooked a little and the chicken has gone white, then you can add the coconut cream.
Allow it to cook for about 15 minutes and serve it with glass noodles or any type of noodle.
It is delicious and so tasty with a unique flavour.
Roast Chicken with Lemon and Chilli
A great meal that is easy to prepare and it changes up the taste of chicken if you have it often. Firstly, you need to remember that it is just a hint of chili as you do not want your guests to stop breathing at the table.
Cut up some green chillies and thinly slice some garlic, throw them into a bowl with olive oil (enough to cover) a dash of whisky and black pepper and salt to taste.
Let this stand for a while and while that is waiting get your chicken ready by ensuring that you do not have to defrost it first. Defrosting chicken makes it tough and we want a succulent meat that will be juicy inside.
Cut through the chicken on each leg, through the breasts and make wholes wherever you can.
Once you have done that, you get a block of butter, add lemon juice, parsley, paprika and a drop of wine. Stir the mixture nicely until it is a smooth paste and then add your chili to it.
Rub the chicken with the paste and stuff the wholes too, so that the chicken will absorb all of the flavours.
Cover it with foil and put it into the oven on slow (140degrees) for two and half hours.
Remove the foil and then add a little bit of olive oil and lemon juice over the chicken and turn on the grill for about 15 minutes.
Vegetables that go well with this would be baby marrows, sweet potato, mushrooms and carrots.
It is delicious, easy to make and very juicy with just a hint of chili.
Chicken For the Kids
Making chicken can be boring especially if it is something that you eat often. A great dish to make for kids if you are in a hurry is chicken nuggets.
Get some chicken mince or buy chicken breasts that you can blend into a pulp. Flatten them out into little 10cm pieces and dip them into a beaten egg, then add flour or get crsipy chicken crumbs.
Deep fry them in oil until golden brown on each side. You have to watch them because the homemade ones burn easily.
Serve it with chips and tomato sauce and the kids will love it and ask you for more!
Stuffed Chicken Breast
This one is a time consuming dish so but it is worth while if you have the time.
All you need is chicken breasts without the bone, ricotta cheese and spinach.
In the middle of the breast, make a tunnel through to the otherside.
Cook the spinach and ricotta together in a pot with some olive oil, thinly sliced garlic, and cheddar cheese. Don't forget to add salt and pepper and for a slightly different taste add a drop of cinamon or nutmeg.
Once the mixture has cooled down, take it and stuff it into the chicken breast.
Now you take the chicken breast and dip into some flour, then egg, then flour again.
Slow fry it on a medium heat until golden brown.
It is absolutely delicious and can be served with mash and some greens.
Secrets to Cooking Chicken with Crumbs
To avoid the crumbs falling off the chicken before it is cooked, you need to heat it a little before you add the crumbs or flour so that it will stick completely.
Also when frying oil add a dash of butter or margarine to the oil in the pan, to avoid anything sticking.
Take the time to make sure that you have battered your chicken well or it will go flaky and all the crumbs will fall off before it is even cooked.
A great tasting crumb mixture is "Kelloggs Southern Fried Crumbs."
Fry on a low temperature so that it will crisp instead of burn.
