Chicken & Broccoli Casserole

This one dish meal is easy to prepare and quick too. It is delicious and incorporates chicken and onions with tasty broccoli to make a delicious meal. It also provides a little crunch with the addition of crackers on the top.

Yields: Several servings


  • 1 rotisserie chicken
  • 1 medium onion, diced
  • 1 bag broccoli florets, fresh
  • 1 can cream of chicken mushroom soup
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 sleeve buttery crackers (Ritz)
  • 1 1/2 tbsp butter or margarine


  1. Debone the rotisserie chicken. Shred into small pieces.
  2. Place chicken and diced onions in a saute pan with butter. Cook on medium until the onions are soft but firm.
  3. Steam the fresh broccoli florets until tender crisp. Chop into small pieces when done.
  4. Mix mayo, lemon juice, soup, and cheese in a large pot. Heat on low until the cheese is melty.
  5. In a 9x13 casserole dish, layer chicken & onions (about 1/2 of it) on the bottom. Then layer broccoli (about 1/2 of it) over the top. Then top with the cheese mixture. Repeat layers.
  6. Cook for about 30 minutes at 350 degrees. Then add smashed up crackers on top and bake for an additional 15 minutes.

      This sounds great, but I am thinking of adding some cooked rice or maybe some cooked pasta with it to bake. This is also quick and easy :)
