Chicken in butter cream

It is an exotic chicken main course dish in smooth, creamy sauce .

Chicken in Butter Cream

Ingredients Required-


FOR MARINATION-

  • Chicken 500gms
  • Ginger paste 2 tablespoons
  • Garlic paste 1 tablespoon
  • Yoghurt 4 table spoons
  • Red chilly powder 2 tea spoons
  • Black pepper ½ tea spoon

FOR THE COOKING-

  • White butter 50 gms
  • Fresh cream 2 table spoons
  • Tomato paste 3 table spoons
  • Onion paste 4 table spoons
  • White sunflower oil 75ml (approx)
  • Sugar 1 tea spoon
  • Ginger paste 1 table spoon
  • Red chilly powder
  • Green chilly (2) cut into small pieces
  • Salt
  • Water.

Procedure

PROCEDURE-

  • Marinate the chicken with the above ingredients and keep it in the refrigerator for 1 hour for the chicken to be softer.
  • In a pan, add the oil and butter and allow the butter to melt.
  • Then to the pan, add the onion paste ,sugar and sauté it for 2 minutes.
  • Add the marinated chicken and fry them until the are grilled and become golden-brown.
  • After this one by one add ginger paste , tomato paste , fresh cream, red chilly powder and cook for 5-7 minutes.
  • Finally add salt to taste.
  • Then pour 3 cups of water, cover the pan with a lid and keep it covered for 15 -20 minutes. Occasionally in this interval , open the lid and sauté to prevent the ingredients to stick to the pan.
  • After all this is over open the lid when oily texture is imparted to the gravy and serve it hot after garnishing it with red chillies.

Chicken Saucy Roast

It is a spicy roasted chicken side dish in tangy sauce .

FOR MARINATION-

  • Chicken boneless 300gms
  • Ginger paste 2 table spoons
  • Garlic paste 2 table spoons
  • Red chili paste 3 table spoons
  • Soya sauce 2 table spoons
  • Black pepper 1 table spoon
  • Food color 1 tea spoon
  • Vinegar 2 tea spoons
  • Cornflour 1 table spoon
  • Salt

FOR ROAST AND SAUCE -

  • Tomato sauce 5 table spoons
  • Chilly sauce 2 table spoons
  • Soya sauce 2 table spoons
  • Capsicum 2 medium sized diced
  • Garlic jullienne cut
  • Cornflour 2 table spoons
  • Water ½ cup
  • Salt
  • Olive oil 8 table spoons

Procedure

For the roast-

  • Marinate the chicken in a bowl , with the above ingredients and keep it in the refrigerator for 1 hour.
  • Then in a griller pan , add 4 table spoons of olive oil and heat.
  • Then to it add the marinated chicken , grill and fry in low simmer.
  • Cover the pan for 5 – 10 minutes , and open the lid occasionally to sauté.


For the sauce-

  • In another pan, add 4 table spoons of olive oil to heat.
  • Roast the cut garlic and diced capsicum.
  • Then one by one add , tomato sauce , chilly sauce and soya sauce and keep mixing.
  • In one cup of water, dissolve the cornflower and add it to the pan.
  • Add salt and sauté it for 5-6 minutes until all the water evaporate and it becomes saucy.
  • Finally toss the roasted chicken in the sauce and serve it hot.

  • Coriander paste 3 table spoons
  • Green chilly paste 2 table spoons
  • Vinegar 1 tea spoon
  • Black pepper
  • Salt
  • Refined sunflower oil.

For garnishing-

  • Coriander leaves

It is a tasty breakfast item with chicken and mayonnaise.

  • Sandwich bread 3 pieces cut into triangular shape.
  • Butter for toasting
  • Mayonnaise
  • Boiled small sized chicken pieces 200 gms
  • Butter for frying and grilling the chicken
  • Boiled diced carrots
  • Salt
  • Black pepper
