Making Ordinary Chicken Taste Spectacular

Herbs and lemon, there's no magical duo greater than these 2 when it comes to producing flavor that's off the charts!

This recipe is a family favorite and there's not a whole lot involved in terms of time and ingredients, yet the most novice cook can look like a genius in the kitchen with this one.

Chicken can be a very difficult thing to master, especially on the barbeque. Chicken can be slow-cooked over low heat (my favorite) or can be grilled at high heat and watched closely to ensure chicken does not turn out overcooked and dry. There's nothing worse than a dry chicken that's overcooked. Your guests will not be impressed with dry chicken and they may not want to come back next time if you pull one of these out and serve it on the menu.

This brings me to this menu, the lemon chicken with herbs and olive oil. What a combination of ingredients! This will allow you time to look like you know what you are doing while at the same time cost you minimally as far as ingredients go.

This best thing to do with this recipe, if you really want to take it over the top, is to buy a whole chicken. One of the best places to buy whole chickens for pennies on the dollar is at Costco. Watch for the sales and go in and buy some chickens whole.

Cut up the chicken into all the major pieces, breasts, thighs, drumsticks, and wings. You can marinate the chicken in this marinade overnight, but keep in mind the citrus will break down the chicken if it's marinated too long. Usually 4-6 hours should be plenty for this recipe.

Get some good EVOO (extra virgin olive oil) and use in the recipe. Buy some lemons or, if you live in California, raid you or your neighbors lemon tree for some good lemons. If you have an herb garden, the fresh ingredients work best. Dried ingredients will work, but fresh is better. An herb garden can be a great way to bolster your key fresh ingredients in your kitchen. Unless you live in Siberia or the North Pole, you can start your own in your backyard (future article in Philzgrill, stay tuned).

Now the recipe for Herb Lemon Chicken is as follows:

1/3 C lemon juice

1/4 C EVOO (extra virgin olive oil)

1 clove garlic, minced

1-2 T finely chopped Rosemary or 2 teaspoons dried

1-2 T finely chopped Tarragon or 2 teaspoons dried leaf Tarragon

1 teaspoon salt

fresh ground pepper (season as you like)

3-4 lb chicken, cut up into wings, breast, drums, etc.

Combine all ingredients and mix vigorously with whisk.

Add chicken to marinade and marinate 4-6 hours or overnight. Place chicken in either baking pan or plastic freezer bag. Turn chicken periodically to marinate thoroughly. Remove chicken 15-30 mins from refrigerator before barbequing.

Place chicken on barbeque and cook appropriately. Watch chicken closely as olive oil and fat from chicken will flare up on the grill. I recommend using lower heat with chicken, cooking slowly as opposed to high heat will preserve juices and tenderness of the dish.

Serve with favorite wine complement such as a Chardonney or a Sauvignon Blanc.
