Chinese Durain Ice Cream
Ice cream Durian is very delicious which has a light creamy taste. Durian comes in canned or frozen but I prefer fresh. How to choose the right Durian for ice cream is to look at the skin. If there is some crack in between the skin of the Durian that mean it is perfect. Sometime we smell it and if it give a very sweet smell through the skin of the durian than that is a perfect durian to buy. Many people who never eat durian says it smell stink which I believe its true. But don’t judge by it smell because the taste is delightfully delicious. With durian you can use it to make ice cream, bread, waffle, dessert with glutinous rice, custard cake, and many more.
Ice Cream Durian, a Chinese way:
1. 4 to 6 segment of fresh durian to make durian paste
2. 2 large egg yolk
3.3 tablespoon of granulated sugar
4. 1 teaspoon of vanilla essence
5. 1 cup light cream
6. 1 cup of milk
First you need to remove the seed from the durian. After that use an electric mixer to mix the flesh into a paste then leave the durian paste in the refrigerator for about 20 or 30 minute to give it a chill until ready to use.
In a medium bowl, whisk the egg with the vanilla essence and sugar. Bring the milk and cream to a near boil over medium heat than reduce the heat to low. Than pour the egg mixture and stir until mixed. If you see bubbles forming at the edge of the saucepan, take it off the stove. Allow it to cool in the freezer for about 30 minute until it just beginning to harden than after that you can mixed it with the durian paste. Continue stirring it several time and finished it in an ice cream maker. If you don’t have it, then you can leave it in the freezer until harden. I usually mixed it and then put it in as Popsicle ice cream.
My lazy way of making durian ice cream is

First I remove the seed from the Durian and then I mixed it an electric mixer. I mixed it until it leave a form of a paste then crack two eggs in it and mixed. Then I add three tablespoon of granulated sugar and continue to mixed it. After the mixture I added 1 cup of milk. After thoroughly mixing the durian, I pour it to a plastic Popsicle and freeze it for about 45minute to an hour.
Both of the ingredient would give it a creamy taste. If you like to make ice cream the correct way, you should follow the Chinese ice cream durian ingredient. If your lazy like me, you can take a short cut to make a delicious ice cream. The different of taste is the Chinese durian ice cream has vanilla taste and very soft and creamy. You can scoop it and serve it on a cone. As my lazy durian ice cream is its creamy but harden. That is because I do not use light cream and finished it in an ice cream maker.
