Chinese Street Food – Turnip Fritters
If you visit Hong Kong or one of the other cities in China, you will find street vendors selling food along the roadside. Some of the tastiest are the fried turnip fritters. Made with Chinese white giant turnips (Daikon Radish), sweet potatoes, Chinese pork sausage and scallions in a crispy batter; this snack food is often served with soy-vinegar dip.
Since there are no Chinese street venders in America selling this tasty snack, you will have to make them yourself. If you can make pancakes, you can make these fritters. The Chinese giant turnips and the Chinese pork sausages are available in your local Chinese grocery.
You don’t need a wok, just a large, heavy frying pan and a potato peeler to shred the ingredients. You can make four pancakes at a time, drain them on paper towels and keep them warm in 275 F oven while you fry the rest of them.
Turnip fritters can be served as a light lunch along with a small tossed salad. They would also make a tasty hot snack at a progressive wine tasting where you serve different appetizers with different wines.
1 Lb. of Chinese White Giant Turnips (Daikon Radish) (Peel off the skin and shave into thin strips with a potato peeler)
4 Oz. of Sweet Potato (peel and shave the same as the turnips)
1 Cup of Chicken Broth
1 Cup of Flour
1 Cup of Cornstarch
½ Teaspoon Salt
2 Chinese Pork Sausages (minced into small pieces)
4 Chopped Scallions (cut into one-half inch strips including the green parts)
1 Cup of Oil (if you use a large skillet – more for a wok)
- Combine all of the ingredients except the oil in a large bowl.
- Heat the oil in a heavy frying pan over high heat to deep frying temperature.
- Pour ¼ cup of batter four times to form four fritters.
- When the first side is golden brown, turn them over and brown the other side.
- Drain them on paper towels and keep them warm in a 275 F oven while you fry the rest of them.
- Serve hot with soy-vinegar dip.
Mix ½ cup of Chinese Red Vinegar with ¼ Cup of Thin Soy Sauce and serve in one bowl or small dishes for each person.
