Chocolate And Cherries What A Combination.

Who doesn't love chocolate cake? And what about cherries? This Chocolate Cherry cake is really very easy to make, and takes no time at all to prepare. The Cherry frosting is really simple to make as well. This cake is a real kid pleaser, my grandchildren love it when I make this cake for them. Also if you would like to, you could make a chocolate and blueberry cake as well. So let us get onto making the Chocolate Cherry cake.

Chocolate Cherry Cake


** 1 box of chocolate cake mix ( any type of chocolate cake that you like )

** 3 large eggs

** 1/2 cup of oil

** 1 can of cherry pie filling

** 2 boxes of instant vanilla pudding mix

** 1 8 oz container of cool whip ( please do not use lite or fat free, as it won't come out right )

Start by pre- heating the oven to 350 degrees, and grease a 9 x13 inch cake pan ( and lightly flour the bottom of the cake pan ). Next make the cake according to the package directions. Open the can of pie filling and pour into a bowl. Try to scoop out the cherries with a slotted spoon, with not to much of the syrup, as you will need that for the cherry frosting, and be sure to leave some cherries as well, so don't add it all to the cake. Next with the mixer, give the batter which you have added the cherries to ,a few quick mixes, just enough to rough chop the cherries in the cake batter. Pour the batter into the greased and lightly dusted with flour cake pan. Bake the cake for 35 minutes, and let it cool completely before frosting it. When the cake is cooled you can make the frosting.

The Cherry Frosting:


Combine the two boxes of instant vanilla pudding mix with 3 cups of cold milk, stir till it thickens, then add the cherry syrup mix, and blend really well, then add the rest of the cherries and stir. Add enough cool whip to make it creamy and thicken it. There is no real measurement that I use, because no matter how you do it, the pudding mousse sets just fine, and is always creamy. Then just frost the cake and put it in the fridge for a few hours or more, so the mousse has time to set. After serving the cake, you will need to put it back in the fridge, because of the mousse frosting.

This Chocolate And Cherry cake is wonderful for any occasion, especially for a special little girls Birthday Party! It would be the hit of the party! And all the children would love it. This cake could even be made for a baby shower, or even a bridal shower. Well thanks for reading.
