Chocolate speaks a universal language of love, appreciation, celebration, and comfort. It comes in an unequaled variety of forms from simple frosted chocolate cupcakes made from a box mix to the most elegant culinary masterpieces designed to dazzle the eye as well as delight one's palate.

Countless numbers cherish memories of those still-warm and heavenly scented home-made chocolate chip cookies lovingly baked using the traditional toll-house recipe printed on the back of Mom's bag of chocolate chips, or other family tradition recipes of their own. They have carried their traditions forward with their own kids and grandchildren.

Easy Chocolate Truffles


1-1/2 cups crushed chocolate Graham crackers

1/2 cup unsweetened cocoa powder

1/2 cup powdered sugar

1/2 cup butter, melted

3/4 cup condensed milk

1/2 cup cashew nuts, chopped coarsely (or use nuts of your choice)

2 cups semi-sweet chocolate chips


1. In a bowl, combine crushed Graham crackers, cocoa powder, and sugar. Mix until combined.

2. Stir in butter milk and nuts. Mix thoroughly.

3. Form mixture into balls. Arrange on a jellyroll pan lined with nonstick baking paper. Refrigerate

about 1 hour to set.

4. Melt chocolate chips in a double boiler, stirring to prevent chocolate from burning.

5. Dip each prepared ball in the melted chocolate.

6. Top with colored sprinkles.

Hot chocolate dates back to the Mayan period, when it was made with corn meal, chiles, and water and was used for sacred ceremonies.

This hot chocolate mix recipe will blow away the taste of any of those store bought packets and it comes together in a snap.


1 cup milk

1/2 cup heavy cream

1/4 cup sugar

1 cup good quality semi sweet chocolate chips

1 teaspoon pure vanilla extract

Whipped cream and chocolate shavings for garnish


Heat milk, cream and sugar and whisk in a sauce pot over high heat until it almost reaches a boil. Next,

add 1 cup good quality semi sweet chocolate chips.

Whisk until melted. Next, add 1 teaspoon pure vanilla extract.

Pour the hot chocolate into your favorite mug. Top with whipped cream and freshly grated chocolate shavings.

Chocolate Banana Marshmallow Dessert Wrap


1 Tortilla or Roti

1 Banana

Chocolate bits (any kind and as much as you prefer)

2 Tbsp. Marshmallow Fluff or handful of mini-marshmallows


Start with a tortilla or roti and place on a warm flat frying pan or grill pan.

On one half, add the following:

- banana in small pieces

- chocolate bits

- marshmallow fluff or mini-marshmallows

Fold the other side over and grill on both sides until it's toasty. Then remove it from the pan and then immediately DEVOUR it!

Devil's Chocolate Coffee-Frosted Cupcakes

Ingredients: Cupcakes

2 cups self-rising flour

2 tsp. baking powder

1 cup packed light brown sugar

1 cup sweet butter, softened

2 separated eggs

200g chocolate, melted

2 tsp. vanilla extract

1/2 cup milk

Ingredients: Frosting

250g cream cheese

200g chocolate, melted

2 tsp. vanilla extract

3/4 cup confectioners' sugar, sifted

1/2 espresso & 2 tsp. coffee, mixed

Instructions: Cupcakes

1. Preheat the oven to 350°F (175°C).

2. Place 24 baking cups into muffin pans.

3. Sift the flour and baking powder and set aside.

4. Beat the egg whites in a medium bowl and set aside.

5. In an other medium bowl, cream the sugar and butter.

6. Add the egg yolks and beat well.

7. Add the melted chocolate and vanilla, mixing well.

8. Add the flour and milk alternately, beating well with each addition.

9. Fold the egg whites gently into the batter.

10. Spoon the batter into the cups.

11. Bake for 22 minutes.

12. Remove from oven, cool for 5 minutes, then remove the cupcakes and cool on a cooling rack.

Instructions: Frosting

1. To make the frosting, cream the cream cheese.

2. Stir the chocolate and vanilla.

3. Add the espresso/coffee-mix.

4. Beat in the confectioners' sugar until thick and creamy.

5. Spread over the cupcakes and decorate any way you'd like to.

6. Store unfrosted in an airtight container for up to 2 days, or freeze for up to 3 months.
