Chocolate Peanut Butter Sandwich Cookies
I've had this recipe for years. I don't remember where I found it. My sons love these cookies, and I do too. It's a perfect combination of chocolate and peanut butter.
- 1 1/2 c. brown sugar
- 3/4 c. butter
- 2 tbsp. water
- 12 oz. chocolate chips
- 2 eggs
- 3 c. flour
- 1 1/4 tsp. baking soda
- 1/4 c. butter
- 1 1/2 c. powdered sugar
- 1/2 c. peanut butter
- 2 - 3 tbsp. milk
- Preheat oven to 350.
- Cook and stir brown sugar, butter, and water until sugar is dissolved. Remove from heat and stir in chocolate chips until melted. Transfer to mixing bowl and cool slightly.
- Beat in eggs. Add dry ingredients.
- Drop onto greased cookie tins. Bake 8 - 10 minutes. Cool on racks.
- Combine butter, powdered sugar, peanut butter, and milk. Stir until smooth. Sandwich cookies together with filling.
The original recipe says to flatten the cookies after baking, but they flatten as they bake.
I tend to make them bigger than I should and then use too much filling, leaving me with unsandwiched cookies. But they taste good plain too.
