Chocolate Raspberry Cake

Chocolate and raspberries are the perfect accompaniment to a great cup of coffee in the morning or afternoon. Think of that decadent taste of rich chocolate mixed with fresh raspberries bursting on your tongue on your patio on a cool autumn morning with that lovely cup of hot coffee or tea. So easy to mix and bake. A dollop of whipped cream and you have a lovely dessert to share with a guest.

Yields: 13"x 9" and a 8" x 8" square dish


  • 4 Cups All Purpose Flour
  • 2 Cups Sugar
  • 5 Tsp Baking Powder
  • 6 Tbs Butter, Melted
  • 2/3 Cups Milk, Twice
  • 2 Tsp Vanilla
  • 2 Eggs, Beaten
  • 4 Cups Raspberries, Fresh
  • 3/4 Cup Baking Cocoa

One Bowl Cake Mix

  1. Preheat oven to 350* and grease a 13" X 9" and 8" X 8" baking pans.
  2. Combine flour, sugar, cocoa and baking powder. Add the milk, melted butter, vanilla and eggs. Stir to blend. Fold in the fresh raspberries.
  3. Pour chocolate raspberry cake batter into the prepared pans and place in oven on center rack and bake for 55 minutes or until a toothpick inserted in center of cake comes out clean. Place pans on a rack and let cool completely. Each piece cut can be served with a dollop of whipped cream or cool whip.
