Chole Bhature

Ingredients

  • 1/2 kg Chana (white chick peas)
  • 1 tsp Cumin seeds
  • 6- 7 nos. Black Pepper corns
  • 2-3 nos. Bay leaves
  • 2-3 nos. Cardamom (brown)
  • 2 inch Cinnamon
  • 3 nos. Onion
  • 1 inch Ginger
  • 7-8 nos. Garlic cloves
  • 1 tsp Coriander powder
  • 2 tsp Red chilli powder
  • 1/2 tsp Turmeric Powder
  • to taste Salt
  • 2 tsp Lemon juice
  • 2 nos. Tomato
  • 2 nos. Boiled potatoes
  • 1/2 tsp Sugar
  • 3 tsp Ghee
  • 2 cups Maida ( All purpose flour)
  • 1/4 tsp Baking soda
  • to taste Salt
  • 3 tsp Ghee
  • 2 tsp Curd
  • for deep frying Oil

Instructions

  1. Wash and soak chana in water overnight. Add 1/4 tsp of baking soda to it.
  2. Cook chana in pressure cooker upto two whistles. Also add 3-4 pepper corn and bay leaves to it while cooking.
  3. Grind Cinnamon,cardamom,onion,ginger,garlic,3-4 pepper corn,1/2 tsp cumin seeds to a fine paste.
  4. Heat ghee in a heavy bottomed pan. Add cumin seeds, Bay leaves to it. Then add the grinded mixture and saute it.
  5. Add Coriander powder and mix it well. Then add 1/2 cup water to it and allow it to cook.
  6. Add turmeric powder, red chilli powder, salt ,tomato slices and sugar.Saute it.
  7. Then add chana along with the water. Mix it well.
  8. When chana gets mixed well add lemon juice and potato slices. Mix properly. Take it off the flame.Garnish with coriander leaves and grated coconut.
  9. Roast maida little bit. Add baking soda, salt, ghee, curd to it and knead a stiff dough with water. Keep it aside for 30 mins.
  10. Roll puris outof the dough and deep fry it.
  11. Serve hot Chole Bhature with onion slices.
