Cinnamon Raisin Cake

Here's What You Need & What to Do With It

When I shop today and see the prices of bakery goods, I am amazed. Here is a hearty inexpensive cake you can make on the weekend and it will last all week. Great with coffee for a quick breakfast or anytime pick me up.

  • 2 cups water
  • 1 cup raisins

Place water in pan, add raisins

Boil for approximately 5 minutes

Let it cool

Place raisin mixture in large mixing bowl

Add:

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 cup nuts (optional)
  • 1 cup oil

Mix together

Add:

  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon

Mix together

Pour mixture into tube pan (you can also use two loaf pans)

Bake for 45 min to 1 hour at 375 degrees

Once cooled it can be served plain or sprinkled with powder sugar.
