Classic Roasted Asparagus

  • 1 bundle of asparagus
  • 1 thick slice of onion, cut straight through
  • olive oil
  • 3 cloves of garlic
  • sea salt
  • fresh cracked pepper

Slice, oil, season and done!

  1. Preheat your oven to 350 degrees. If the asparagus has tough ends, trim them. Slice an onion, all the way through the onion, about 1/2 inch thick. Oil a baking sheet.
  2. Spread the asparagus on the baking sheet. Add 3 cloves of minced garlic. Pull the onion slices apart and scatter them on top of the asparagus and garlic. Toss around a bit, mixing the olive oil and garlic into the asparagus and onion.
  3. Place in the oven. It should be finished within 35 minutes. Keep an eye on it, tossing and flipping pretty regularly. Just wait until it's rich in color and caramelized.
  4. Eat and enjoy! Add a baked potato and call it dinner.
