Coconut Cream Cornmeal Porridge

Yields: Serves 4 people

Ingredients

  • 1 cup fine yellow Cornmeal, white corn can be used as well
  • 3 cups water
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 tsp. Vanilla extract
  • 1 tbsp. Coconut cream
  • 1/2 tsp. butter
  • 3 tbsp. sugar
  • 1 cup milk
  1. Bring water, salt, milk and coconut cream to a boil. Stir in cornmeal
  2. Cook for 14-15 mins
  3. Add nutmeg, vanilla and butter.
  4. Sweeten with sugar to taste. Let it cook for an extra 20 minutes. Serve hot
