Coconut Macaroons--Another of My Bridal Shower Recipes
Those on Hubpages that follow me and have read some of my recipe hub articles know that some of my recipes were handed down to me by family and friends at my bridal shower. See when my mom was sending out invites to my bridal shower, she included recipe cards for the guests to fill out, return at my shower and for me to have to build my recipe book in the beginning of my marriage.
Well, this recipe that I am sharing today is indeed from that day. My husband's aunt decided to share her famous and delicious recipe for Coconut Macaroons. She is a very creative lady, who makes so many of her dishes and desserts from scratch. Also, she is a very crafty and ingenious woman, who alongside her gift that day gave me a beautifully framed picture of my husband with the Caption: "Sweeper Wanted," with a job description also included as well, which was an adorable photo of my husband as a little boy sweeping with a broom larger than himself!
This recipe for Coconut Macaroons is so scrumptious and such a wonderful dessert to make for your family or even a small gathering. I have made this one quite a few times and again can tell you it is a winner for us, because we love coconut and cookie too!! If you too are a lover of coconut and cookies this one is for you too!!

- 14 oz Sweetened Shredded Coconut
- 14 oz. Sweetened Condensed Milk
- 1 Tsp. Vanilla Extract
- 1/4 Tsp. Salt
- 2 Extra Large Egg Whites, At Room Temperature
- Combine Coconut, condensed milk and vanilla in a bowl.
- Whip egg whites and salt to form medium peaks.
- Fold egg whites into the coconut mixture.
- Drop the batter onto sheets lined with parchment paper. Use a small ice cream scoop or two teaspoons to form cookies.
- Bake at 325 degrees for 25-30, until golden brown.
- Cool and Serve.
