Coconut Macaroons--Another of My Bridal Shower Recipes

Those on Hubpages that follow me and have read some of my recipe hub articles know that some of my recipes were handed down to me by family and friends at my bridal shower. See when my mom was sending out invites to my bridal shower, she included recipe cards for the guests to fill out, return at my shower and for me to have to build my recipe book in the beginning of my marriage.

Well, this recipe that I am sharing today is indeed from that day. My husband's aunt decided to share her famous and delicious recipe for Coconut Macaroons. She is a very creative lady, who makes so many of her dishes and desserts from scratch. Also, she is a very crafty and ingenious woman, who alongside her gift that day gave me a beautifully framed picture of my husband with the Caption: "Sweeper Wanted," with a job description also included as well, which was an adorable photo of my husband as a little boy sweeping with a broom larger than himself!

This recipe for Coconut Macaroons is so scrumptious and such a wonderful dessert to make for your family or even a small gathering. I have made this one quite a few times and again can tell you it is a winner for us, because we love coconut and cookie too!! If you too are a lover of coconut and cookies this one is for you too!!

Cook Time

Prep time: 10 min
Cook time: 30 min
Ready in: 40 min
Yields: 14-16 People

Ingredients

  • 14 oz Sweetened Shredded Coconut
  • 14 oz. Sweetened Condensed Milk
  • 1 Tsp. Vanilla Extract
  • 1/4 Tsp. Salt
  • 2 Extra Large Egg Whites, At Room Temperature

Instructions

  1. Combine Coconut, condensed milk and vanilla in a bowl.
  2. Whip egg whites and salt to form medium peaks.
  3. Fold egg whites into the coconut mixture.
  4. Drop the batter onto sheets lined with parchment paper. Use a small ice cream scoop or two teaspoons to form cookies.
  5. Bake at 325 degrees for 25-30, until golden brown.
  6. Cool and Serve.

      Janine, I have just read another coconut recipe elsewhere on HP and then I have come across your recipe for coconut macaroons. I have not had these since I was very small, my grandmother used to make them but hers had jam in the middle (not sure how she cooked them). I am in a coconut mood now, thanks :o)

      Rema, thank you and do agree about the combination of coconut and condensed milk, so very delicious. As for leaving out the eggs, I have always put them in so I honestly can't say, but I guess if you wanted to try and experiment, let me know if that could indeed work or not. Also, glad you enjoyed seeing Kevin as a little boy (this picture is my favorite and see love seeing it after all this time). Thank you also for pinning and sharing too!!

      Oh Yummy Janine, even before making them I can see that they are going to be delicious. Coconut and sweetened condensed milk is an excellent combination and the recipe sounds so simple that there can be no excuse for not making these coconut macaroons.

      Not that I am averse to eggs but can this recipe be prepared without the eggs? Just a thought.

      Amazing! I cannot wait 40 minutes for this delicious Coconut Macaroons. At 230 degrees I can start cooking my lasagna as well. Your husband's aunt did you a favor for life. Those bridal showers were the bomb back then! Sharing and tasting mentally... there is no other way, unless I go back to HP around May 2023.
