Coconut Pudding Recipe
Fresh Tender coconut - 2 nos.
Tender coconut water - 1 cup
Condensed milk - 1 cup
Milk - 2 cup
Agar-Agar or China Grass strands - 1/4 cup
Take two fresh tender coconut and scoope out the fleshy part . Make it into a paste by using a blender and keep in a bowl aside. In another bowl take one cup of tender coconut water and add agar-agar . Heat it until it melt completely. Meantime mix the milk and condensed milk in another bowl and boil it in medium heat. Add the melted agar-agar to the boiled milk and mix well. Put off the flame and allow to cool for five minutes. Add the blended tender coconut to the cooled milk mixture. Pour the mixture into a cake pan or stainless steel pan. First keep the pudding in the freezer for about 15 minutes or until it starts to set. Then remove the pudding from the freezer and then keep it in the refrigerator.Now the pudding is ready to use.
You could granish the pudding with dried grapes, almonds, cashew nuts etc. Then gently cut the pudding by using knife and serve it in dessert bowls.
