This chilled spaghetti salad is perfect to share at a picnic, barbeque, or any family gathering. Be prepared for people asking you for this delicious recipe.

Seasoning for Cold Spaghetti Salad

In addition to salt, pepper and Italian seasoning, my family and I sprinkle Parmesan cheese on our spaghetti salad.

Ingredients for Spaghetti Salad

  • 1 Pound Spaghetti Noodles
  • 1 Can Black Olives
  • 10 Ounce Container Baby Tomatoes, Cut in Half
  • 1 Cucumber, Diced
  • 1 Avocado, Ripe
  • 2-3 Ounces Pepperoni, Slices
  • 3 Ounces or More Colby Jack Cheese, Diced
  • 1 Medium Onion, Diced
  • 1 Tablespoon Italian Seasoning
  • 1 Tablespoon Salt
  • 1 Tablespoon Black Pepper
  • 8 Ounces Wish-Bone Italian Dressing

Instructions

  1. Cook spaghetti in boiling salted water until al dente. Rinse in cold water, drain and set aside.
  2. Cut baby tomatoes in half.
  3. Peel and slice cucumber.
  4. Drain black olives and cut in half.
  5. Peel and cut ripe avocado into chunks.
  6. Cut Colby Jack cheese into chunks.
  7. Dice a medium onion.
  8. Leave pepperoni slices whole or cut in half.
  9. Place pasta in large mixing bowl.
  10. Add Italian dressing and vegetables to bowl of pasta.
  11. Mix well: pasta, Italian dressing, vegetables, salt, pepper and Italian seasoning.
  12. Put in refrigerator and chill to your liking.
  13. Enjoy the best cold pasta recipe for summer picnics, barbeques, and other family gatherings.

Health Benefits of Vegetables

  • Dietary fiber from vegetables, as part of an overall healthy diet, helps reduce blood cholesterol levels and may lower risk of heart disease. Fiber is important for proper bowel function. It helps reduce constipation and diverticulosis. Fiber-containing foods such as vegetables help provide a feeling of fullness with fewer calories.
  • Folate (folic acid) helps the body form red blood cells. Women of childbearing age who may become pregnant should consume adequate folate from foods, and in addition 400 mcg of synthetic folic acid from fortified foods or supplements. This reduces the risk of neural tube defects, spina bifida, and anencephaly during fetal development.
  • Vitamin A keeps eyes and skin healthy and helps to protect against infections.
  • Vitamin C helps heal cuts and wounds and keeps teeth and gums healthy. Vitamin C aids in iron absorption.

  • Eating vegetables and fruits rich in potassium as part of an overall healthy diet may lower blood pressure, and may also reduce the risk of developing kidney stones and help to decrease bone loss.
  • Eating foods such as vegetables that are lower in calories per cup instead of some other higher-calorie food may be useful in helping to lower calorie intake.

Cold Pasta Salad

According to Wikipedia: Pasta salad (Pasta fredda) is a dish prepared with one or more types of pasta, usually chilled, and most often tossed in a vinegar, oil or mayonnaise-based dressing. It is typically served as an appetizer or a main course. Pasta fredda is often regarded as a spring or summertime meal, but can be served year-round.

Cold Pasta Salad

The great thing about making a cold pasta salad is that you can add your favorite ingredients. There is no right or wrong to this recipe. I love vegetables, so I add many varieties. I also enjoy adding diced cheese to make it more of a main dish. Make this pasta salad your own by using ingredients that your family will eat and enjoy.

    What a great idea to use up leftover spaghetti! I never even thought of doing something like this.

    As a vegetarian, of course I'd omit the pepperoni, but the rest sounds great. In the past, I'd put the rest of the sauce into the spaghetti before putting it in the fridge, but hubby would rather keep them separate, and the quantities don't always come out 'even,' so instead of macaroni salad, I could make spaghetti salad!

    I like pasta in any form. Gotta try this.

    One of the great things about it is is can be done ahead. Using pasta instead of lettuce means it won't wilt.

    (An easy way to slice the baby tomatoes is to fill a deli container lid with them, put another lid on top and hold it down while you slice between the two lids. Works for grapes, too.)
