Wikipedia describes "Comfort Food" as a food that provides a nostalgic of sentimental feeling to the consumer. In other words: food that taste good, brings back fond memories and just makes you feel better. I suspect the first food that comes to mind when you think of "comfort food" will be"chicken soup". No one said you don't have to be sick to enjoy a comfort food meal. That said, here is an recipe I am sure you will enjoy.

Making Sandy's Chicken Soup

Prep time: 30 min
Cook time: 5 hours
Ready in: 5 hours 30 min
Yields: 6 to 8 bowls

  • 1 whole chicken, washed
  • 4 to 6 cups water, enough to completely cover the chicken
  • 1 cup chopped carrots
  • 1 small onion
  • 1 cup chopped celery
  • 1 cube chicken bullion
  • 1 table spoon minced garlic
  • 1/2 cup chopped parsley
  • 8 oz noodles or to taste

Making your soup

  1. Put the chicken and all the other ingredients EXCEPT the noodles in your crock put. Depending on your pot, set the temperature to low. Allow it to cook all day. Add a little salt and pepper if you like. When the chicken is done and the vegetables are tender, remove the chicken and allow to cool on a cutting board.
  2. In a separate pan cook the noodles according to directions. While the noodles are cooking, remove the bones from the chicken-remember chicken has small bones so be sure you remove all the bones. Chop the chicken in to bite size pieces and return it to the crock pot. Drain the noodles and add to chicken soup. Turn the crock pot up to high and cook for 15-20 minuets allowing the noodles to soak up that wonderful chicken flavor. Serve with garlic or home made bread for a truly comfortable meal.
