Cookie Dough Delights! A Cookbook Filled With Fun, EASY and Delicious Recipes Using Cookie Dough!!

I love to bake. I also love to eat…but that’s another story! It is no secret that I collect cookbooks and often spend hours at a time browsing the baking/cooking section of the local Barnes and Noble Bookstore. One Saturday afternoon, not too long ago, I came across a cookbook called “Cookie Dough Delights.” Now I already have several cookie cookbooks, however, the cookies pictured on the cover of this particular book looked so yummy…I had to investigate!

Cookie Dough Delights” was written by Camilla V Saulsbury. Ms. Saulsbury is not only a food scholar and food writer, she is also a recipe developer (not to shabby if you ask me!). Several of Ms. Saulsbury’s recipes have been featured in national magazines such as “Southern Living” and “Better Homes and Gardens.”

Cookie Dough Delights” contains over 150 recipes (including drop cookies, filled cookies, fancy shaped cookies, bars and many other special treats). According to the statement on the front cover, all of the recipes in this book are “foolproof.” Now I don’t consider myself a fool…however, I will be the first to admit that I’m not the best cook/baker in the world (shocking, I know). In order to find out if this claim is true...there was only one thing to do…BAKE SOME COOKIES!

In order to be fair, I closed my eyes and randomly flipped through the book. I ultimately landed on page 139 which just so happens to be the home of lemon and coconut thumbprint cookies. I love both lemon and coconut…so I was happy (as was my husband who also loves these two ingredients). Now I’m not going to give you the exact recipe for this particular cookie because of a little thing known as copyright infringement, however, I will say that the recipe was in fact easy to follow, it didn’t take long to combine the ingredients, and best of all…the cookies came out of the oven smelling and tasting delicious (of course I waited for them to cool before sampling).

It is important to note that ALL of the recipes found in "Cookie Dough Delights" are considered to be “semi-homemade.” What does this mean? Well, every single recipe starts out with a roll of prepared, refrigerated cookie dough. You know what I’m talking about…the rolls of cookie dough you find next to the pudding in the refrigerated section of your local grocery store. Now for those of you that like to bake from scratch 100%...then this cookbook might not be for you. However, for those of you that don’t always have a lot of time to bake but still want to put some effort into the cookie making process…then this book fits the bill. The cookies I made (lemon – coconut thumbprints) started out with a roll of sugar cookie dough. However, the recipe also called for shredded coconut, lemon pie filling (which I made), white chocolate chips and a very small amount of vegetable shortening (to melt with the white chocolate chips). Personally, I really like this cookbook and was happy to add it to my cookbook collection. Now don’t get me wrong, I enjoy making cookies completely from scratch (the old fashioned way). However, it is nice to know that books such as “Cookie Dough Delights” exist for those times when you want to bake but don’t have a lot of extra time. One additional note…this book is great for kids (with supervision of course). The recipes truly are easy to follow and there are MANY different cookies and treats to choose from.
