Cooking scallops for One yummmmm
Noodles, peas and scallops ?
Treat yourself tonight tomorrow to buttery scallops, silky pasta, and a delicate sauce...made in minutes....
Serves One: prep time= 5 minutes or so...total time 15 minutes ??
2 ozs. of noodles..wide..crinkles..whatever you like...
coarse salt and ground pepper
1/2 cup frozen peas. thawed (organic of course) or even fresh.
1/2 tsp. fresh lemon juice
1 Tblsp. coarsley chopped parsley (from my garden)
1 Tblsp. butter
1/4 lb. sea scallops...seek out the freshest.scallops, remove the small tough muscle attached to the side. Clean.
1. Cook pasta in boiling water, salted until el dente, according to package directions,, of course. Reserve 1/4 cup of the pasta water: add peas to pasta, and drain. Return pasta and peas to pot. (If fresh pre-cook first). Add lemon juice,parsley, and 1/2 Tblsp. butter. Toss, adding the reserved pasta water a little at a time to create a thin sauce that coats the noodles. Season with salt and pepper.
2. Pat scallops dry with a paper towel; season with salt & pepper. In a small skillet, heat remaining 1/2 Tblsp. butter over medium heat.Cook scallops until browned on one side, 2 to 3 minutes. Flip; cook until opaque through-out, 30 to 60 seconds more. Serve with the pasta..Yummm.. G-Ma :O)
