Okay here were going to make Cornbread Chili Pie which is one of the most delicious things you will ever taste. It is one of the best casseroles that I have ever tasted and if your looking for a one dish meal then this is one of the best.
For Your Cornbread Chili Pie You Will Need.
1. One Half Cup Sour Cream.
2. Four Tablespoons Real Butter Melted.
3. One Cup Whole Milk.
4. Two Large Eggs.
5. One Teaspoon Sea Salt.
6. One Tablespoon Baking Powder.
7. One Cup Cornmeal.
8. One Cup All Purpose Flour.
9. Three Cups Shredded Cheddar Cheese.
10. One Cup Well Drained Canned Corn.
11. One 14 - 16 Ounce Can White Kidney Beans washed and drained.
12. One 14 - 16 Ounce Can Fine Diced Tomatoes.
13. One Half Cup Water.
14. One Half Teaspoon Red Pepper Flakes.
15. One Half Teaspoon Cinnamon.
16. One Half Teaspoon Nutmeg.
17. One Teaspoon Cumin.
18. One Teaspoon Paprika.
19. One Teaspoon Oregano.
20. One Tablespoon Worcestershire Sauce.
21. One And A Half Pound Ground Beef.
22. One Tablespoon Chili Powder plus more to sprinkle on top.
23. One Four Ounce Can Green Chilies.
24. One Tablespoon Fresh Minced Garlic.
25. Two Large Purple Sweet Onions.
26. Olive Oil To Saute In.
In a large skillet add your olive oil and saute your onions that you have diced well and your garlic until the onions are done. You will want your onion to be diced up in very small pieces. Its very important that your onion be chopped and diced up into very small pieces. Now you want to remove two thirds of the onions and place in a bowl and set aside. Now add in your green chilies and cook them until they are tender. Remove the onions and chilies and set aside in a separate bowl.
In the skillet brown your hamburger meat crumbling and chopping it as it cooks and when it is cooked done drain the grease away. Add the onions , chili powder , Worcestershire sauce , oregano , paprika , cinnamon , nutmeg , red pepper flakes , water , and mix together thoroughly continuing to cook. Now add in your tomatoes , corn , and beans and continue to cook on a simmer until thoroughly heated.
Now you will want to preheat your oven to 400 degrees and grease a 9" X 13" casserole dish. Now pour your meat mixture in and pour 2 cups of the shredded cheddar cheese over the top.
In a large bowl combine your flour , cornmeal , baking powder and salt. Now stir in your eggs , sour cream , milk , and butter and mix together very very well. Now add in your onions/chilies mixture , and the remaining cup of cheese and mix together very well. Once you have it well mixed you will want to pour it all out over the top of your meat mixture and smooth it out with a large spoon. Sprinkle the top with chili powder.
Now bake in the preheated oven for 25 to 30 minutes until a toothpick inserted in the center comes out clean. Let it set for 15 - 20 minutes at room temperature before you slice in servings and serve. You can serve extra sour cream on the side with the cornbread chili pie.
