Changing Up This Dish

My sweet grandfather, lived just across the state line in Tennessee. He knew that I have a love for cooking so, he took it upon himself to find all of the recipes that he could for me. His local newspaper at the holidays always had this section that was like a recipe book but, it was newspaper. These recipes were sent in to the local newspaper by local residents. I loved getting these papers from him.

A lot of the time they have old recipes in them. Most of the residents in this area are older and they may share recipes that have gotten "lost" over the years. Especially recipes for cakes and pies. There were also simple everyday recipes such as, different potato recipes, macaroni and cheese, gravy recipes (chocolate and white), It did not have to be the holidays, necessarily, but, he might have just cut out and saved me the newspapers with recipes in them that he thought I might like. I don't know what made him start saving newspapers for me but, once he got to saving them, I would get several really great sounding recipes each time I would go to his house. Secretly, I would always hope that he had recipes for me each time that I came to visit. It was always interesting to me to see what recipes that he picked out for me. It seemed very important to him that I liked the recipes each time. So, I would always try to make it a big deal about the recipes that he found for me. As soon as he gave me the paper I would go sit beside him and look through the paper. He would just grin and agree with me as to what sounds good. I always thought it was a nice gesture of him to save the papers for me. Unfortunately, he passed away a few years ago. I still sit around and look at recipes to this day.

This is one of the casserole recipes that was in one of those newspapers.

This recipe is truly a southern flavored filled recipe. I always like to experiment with different recipes and depending on what kind of mood that I am in, will determine what recipe I will try. This is just one of those simple recipes that is made of ingredients that are found around the house. This dish is really simple to fix and it is really good.

This particular recipe is a favorite of mine because you can use different cheeses and different vegetables to give the casserole a unique flavor. The recipe would be great with sauteed onions, green bell peppers or if you like a little heat, use jalapenos or the favorite.pepper of your choice.

A different kind of twist on this recipe is given with the seasoned croutons. If you or your family or guests like eggs, these can be fixed many ways to include the using of the chunk ham that you find in the refrigerated section of the grocery near the meat. Mostly, I use this diced ham for salads, but, in this casserole it gives the recipe more of a meaty flavor. With this ham being thicker being diced in cubes, it also holds it's shape better in the casserole. Other ham that I have used in this casserole cook down to nearly nothing and you can't tell the ham was in the casserole.

Our family loves cheese in and on everything and I would also recommend that you add extra cheese to this dish five minutes before it is done, this will allow the cheese the melt right on top. if you are a cheese lover this is the way to go. This is an easy casserole to prepare ahead of time and keep in the freezer for an easy meal.

This is also a great recipe that you can say cut in 1/2 for instance, and this recipe is also good made a day ahead of time for unexpected company or expected company!! Ha Ha!!

Other Ideas are to take this casserole to work breakfast functions, work meetings and family gatherings. As with most of the recipes that I prepare, I try to look at how difficult or easy it will be to transport the dish. This is an easy recipe to transport. How can we forget this is a great way to make ahead of time as well and put in the freezer until ready to be cooked. Everyone will wake up to the wonderful smell of the casserole in the mornings.

Some other variations of this recipe exist but, I simply prefer this recipe over the others.

Ingredients

  • 3/4 cup mayonnaise or reduced fat mayo
  • 1/4 cup milk
  • 3 cups ham, chopped
  • 3 cups seasoned croutons, 6 oz box
  • 1 1/2 cups cheddar cheese or swiss cheese, shredded
  • 1 cup celery, sliced, optional
  • 1/2 cup onion, chopped

Instructions

  1. Beat mayonnaise and milk with a wire whisk or fork in a large bowl. Add remaining ingredients and mix well. Transfer to greased 12 X 8" baking dish. Heat oven to 375 degrees and bake 30-35 minutes or until heated.
  2. Variation: Substitute unseasoned croutons and 1/4 teaspoon of pepper and garlic powder.

Ham is great for breakfast, lunch or dinner. It is one of those meats that is good in combination with a lot of different foods. For this recipe I always use the chunk ham as it holds it's shape well and doesn't cook away to nothing. You still have the small bites of ham that you get throughout the casserole.

You can buy this ham packaged at any grocery store.
