  • 1 8oz package cream cheese, softened
  • 1 cup powdered sugar
  • 1 average size zucchini, shredded
  • 3 average size carrots, shredded
  • 2 eggs, beaten slightly
  • 1 1/2 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup cooking oil
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/4 tsp baking soda


  1. Prepare your frosting by beating the softened cream cheese and powdered sugar together in a medium bowl with an electric mixer set to medium speed. Beat until fluffy, and set your frosting aside.
  2. Preheat your oven to 350 degrees F.
  3. In one of your large mixing bowls combine the all-purpose flour, ground ginger, baking soda, and baking powder. In your other large mixing bowl add the slightly beaten eggs, shredded zucchini, shredded carrots, packed brown sugar, cooking oil, raisins, chopped walnuts, honey, and vanilla extract. Use your electric mixer set on low speed to combine these ingredients. Once combined pour this bowl into the other large bowl which contains your flour mixture, and stir with your wooden spoon just until everything in your batter is combined.
  4. Use your wooden spoon to spread the batter evenly throughout your non-greased 13"x9"x2" baking pan.
  5. Bake in your preheated oven for 20-25 minutes or until a wooden toothpick is removed cleanly after being inserted into the center of the dish.
  6. Allow the dish to cool (in pan) for 10 minutes on a wire baker rack before frosting. Ice the dish with the frosting from your medium bowl, and cut into (36) 1"x3.25" bars. Enjoy!
