Creamed-filled Strawberries

Updated on June 11, 2008

One filled strawberry is just 36 calories :o)

18 large fresh strawberries

1 cup cold fat-free milk

1 package (1 oz.) sugar-free vanilla pudding mix

2 cups reduced fat whipping cream

1/4 teas. almond extract

***note: you don't have to use fat free...but if you don't the calorie count goes up***

Remove stems from strawberries; cut a deep X in the top of each berry. Spread berries apart. In a bowl, whisk milk and pudding mix for 2 min.. fold in whipped cream and almond extract. Pipe or spoon about 5 teas. into each berry. Chill until ready to serve.

I like to sprinkle the dish with powdered sugar and put a mint leaf on. You could also sprinkle with chocolate shavings. enjoy :o) hugs
