Creamy Cheesecake Recipe

One of my favorite desserts to make anytime of the season has to be Cheesecake. My mother spent a lot of time perfecting her own different spins on the classic cheesecake. Using all types of different fruit topping's I began to realize the impact simple fruit flavors have when mixed together. My favorite topping combination has to be strawberries and raspberries, these to fruits when combined made for a mouth watering treat. Indulge yourself, try out the recipe below and make your taste buds want more!


Step 1 Preheat oven to 325 degrees fahrenheit.

Step 2 Use a blender or your hands to crush the graham crackers into small crumbs.

Step 3 Add your choice of butter and sugar making sure to evenly mix together. After mixture becomes dough like press onto the base of a 9-inch spring-form pan with your hands or spoon, and then put in fridge to chill.

Step 4 For the filling, place the cream cheese in a large bowl. Beat by hand with mixing beater or use an electric mixer set. Blend in the sugar and add the flour while beating until combined. Take the 3 eggs and beat in the eggs, one at a time, just until blended, making sure to scrape the side of bowl often. Add your choice of sour cream, lemon peel and vanilla extract and beat until blended.

Step 5 Pour the filling that you just prepared over the chilled crust in the pan.

Step 6 Bake the cheesecake for 1 hour and 15 minutes. Turn off oven and keep the oven door ajar. Let the cheesecake sit in oven for about 1 hour. Transfer to a wire rack to cool completely. Run a knife around sides, to prevent from sticking to pan. Cover and chill for 6 hours or overnight.

Step 7 When ready to serve, remove the pan sides. Slide the cheesecake onto a serving plate.

Step 8 For the topping, overlap the strawberries in circles on the cheesecake. Fill the center with the optional raspberries, pineapple, kiwi, or oraganges for extra flavor.


The estimated preparation time for this recipe is approximately 25 minutes, plus cooling and chilling time. Estimated baking time is around an hour and 15 minutes. The ingredients will make a pie that serves around 16.

Preparing the crust

Choose from your favorite brand of graham crackers, you will need 11 whole graham crackers or approximatley 22 squares. My suggested choice of cracker would have to be "Honey Graham", the honey adds to the overall flavor of the crust.

In a medium size bowl melt 1/4 cup butter or margarine in 2 tablespoons of sugar and set aside for mixing.

Preparing the filling

For this recipe you will need at least 5, 8 oz packages of softened cream cheese. My cream cheese of choice has to me "Philadelphia" cream cheese.

Next you will need the following; 1 1/3 cups of sugar, 3 tablespoons of flour, 3 large eggs, 1/2 cup of sour cream, 2 teaspoons of finely grated lemon peel, and 1 1/2 teaspoons of vanilla extract.

Preparing the topping

You will need 2 pints of hulled strawberries, cut into thin slices. For extra flavor you can choose and additional topping to go along with your strawberries. My suggestions for the additional topping can be the following; 1/2 cup of raspberries, pineapple, kiwi, or oranges. If these choices are not to your liking create your own and enjoy!

      I will admit... I have never been a fan of cheesecake before now. Now that I am an adult I absolutely love the stuff. Now you have me craving cheesecake!! Do me a favor... write a recipe on a healthy dish that won't go straight to my butt! LOL I have to admit though, because I have never been a fan of cheesecake I didn't realize the process to make a cheesecake. Great hub... yummy pictures! Keep up the good work! :)
