Culinary Content: Squash, Pumpkin, Butternut, and Delicata
Culinary Content is a regular feature in my column here at HubPages where I share the delicious recipes and food related articles I have come across in my travels online. This time, I have a squash theme, with sage and hazelnut pumpkin ravioli, chocolate chip pumpkin bread, baking your stuffing in squash, orzo stuffed delicata squash, butternut squash, chestnut, and pancetta soup, a nutty pumpkin dip, and pumpkin cinnamon rolls. This Pumpkin Ravioli with Sage and Toasted Hazelnuts recipe or this variation on it is a delicious way to make an autumn pasta dish. There is so very much more to make with pumpkins than pies and jack-o-lanterns!

Here's a creative idea: Roasted Chestnut and Persimmon Stuffing... in a pumpkin! (From Vegan Visitor). As a vegan and vegetarian, I've always cooked my veggie version of stuffing in a plain old baking dish, but why not stuff a pumpkin instead? I saw it too late for Thanksgiving this year, but I might just try it anyway before all of the pumpkins disappear. The chestnut persimmon stuffing itself looks delicious, and the presentation can't be beat.
I love orzo, and I love stuffed squash, so this delicata squash stuffed with orzo in a sage brown butter sauce from Herbivoracious sounds like a fantastic autumn meal. Delicata squash has an edible skin, so it is easier to eat than many other stuffed squash dishes.
Squash soups are one of my favorite Autumn treats, and this Butternut Squash, Chestnut, and Pancetta Soup recipe from Chocolate Shavings http://chocolateshavings.ca/ looks delicious. (Word of warning for you vegetarians out there, pancetta is meat).
I was very interested in this Nutty Pumpkin Dip (Mouttabal al-Yaqteen) recipe at Desert Candy. I hadn't ever seen a recipe quite like it, but apparently it's pretty common in Middle Eastern cuisine: "You'll often find this pumpkin dip on tables as an appetizer, perhaps garnished with flecks of parsley or jewels of pomegranate seeds, and its nutty sweet aroma makes it as delicious as it is beautiful." What an interesting idea for an autumn appetizer.
