The French Culinary Institute is the school that I would attend if I were to go back to culinary school. The French Culinary Institute has a very distinguished alumni that includes celebrity chef Bobby Flay, who attended The French Culinary Institute New York . Kitchens include state of the art equipment. Learn to create fantastic cakes like the one featured above. Each program includes uniform, books,and equipment, as well as family meals prepared by students. Those attending certain programs even have the opportunity of graduating at Carnegie Hall.

From the moment I walked in I was mesmerized. Students were pulling sugar and creating beautiful ribbons of candy. In another class students were pulling silver-skin off sub-primals and fabricating different cuts of meat, The next thing I knew I was attending orientation. I received 5 uniforms, a tool kit, and a student handbook. Then came skills 1 where I learned the 5 mother sauces of french cuisine. When we began learning knife skills we started with a hard aspic.The reason for this was that it could be melted afterwards and reformed. We practiced our julienne, brunoise, small dice, large dice, just to name a few. Then came skills 2. We worked more on our knife skills, and learned new cooking techniques.

The Culinary Institute of America
The Culinary Institute of America began in 1946 to teach returning soldiers how to cook. It is a school of first. It was the first school of its kind in the U.S. The first to offer a degree program, the first allowed to offer a master chef test. They were also the first to offer a nutrition course.
