Delectable Chicken Recipes
Mmmmmm....Chicken
You can bake it, roast it, boil it, fry it. grill it, broil it, you can do anything you want to with it and it will still be delicious. There's no other meat as versatile as chicken. You could have it every night for dinner for a month or so and never cook it the same way. I put together so great chicken recipes, family pleasing recipes, to add to your own personal collection. ope you enjoy them.
Chicken Cacciatore
Ingredients:
6 boneless, skinless chicken breasts
1 tsp olive oil
1/2 tsp ground black pepper
1 tsp sea salt
1/2 cup onion, chopped
1 clove garlic, pressed
1 tsp basil
1/2 tsp oregano
3 larges tomatoes, chopped
1/2 cup wine vinegar
Directions:
Salt and pepper chicken breasts and brown in olive oil.
Remove chicken and sauté onion and garlic for 5 minutes.
Add basil, oregano, tomatoes, and wine vinegar and bring to a boil.
Cooks until sauce thickens, about 10 minutes.
Return chicken to the pan and cook another 15 to 20 minutes, until chicken is done.
This recipe is good served over pasta.
Crockpot Chicken and Mushrooms
Ingredients:
5 whole chicken breasts
1 can cream of mushroom soup
1 can cream of chicken soup
1 can cream of celery soup
1 soup can of water
1 tsp rosemary
1 tsp paprika
1 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
2 cups fresh mushroom slices
1 tsp parsley
1 cup sour cream
Directions:
Remove skin form chicken breasts and split in half.
Arrange chicken in crock pot.
In large bowl combine soups, water, sour cream, mushrooms, and spices.
Blend well and pour into crock pot over chicken.
Cover with lid and cook on high for 6 to 7 hours.
Great served over potatoes, rice or pasta with a side salad.
Aunt Bea's Chicken
Instructions:
1 tsp salt
1/2 tsp black pepper
1 cup flour
3 - 4 lb fryer, cut up
1/4 cup olive oil
2 can diced tomatoes (14 1/2 oz)
1 cup ham, chopped
1/2 cup chopped onions
1 green pepper, chopped
1/2 cup chicken broth
Directions:
Preheat oven to 375 degrees.
Salt, pepper and flour chicken pieces.
Brown chicken over medium heat in olive oil.
Place chicken in a large baking dish.
Pour off excess oil in fry pan and fry tomatoes, ham, onions, and bell pepper until onion is tender.
Pour in chicken broth and simmer for 5 minutes.
Pour over chicken in casserole dish.
Cover and bake for 20 to 25 minutes, until chicken is done.
Delicious served with potatoes and a side of green beans.
Orange Chicken
Ingredients:
1 frying chicken (about 3 lbs), cut-up
2 tbsp shortening
1 tsp seasoned salt
1/2 tsp paprika
1 medium onion, sliced
1/3 cup frozen orange juice concentrate, undiluted
1/3 cup water
2 tbsp brown sugar
2 tsp soy sauce
1/2 tsp ginger
Directions:
Sprinkle chicken with seasoned salt.
Melt shortening in a large frying pan and brown chicken on all sides.
Place onion slices on browned chicken.
Combine orange juice concentrate, water, brown sugar, soy sauce and ginger and pour over chicken.
Cover and simmer for 35 to 40 minutes.
Delicious served over rice with a small side salad.
Garden Chicken Casserole
Ingredients:
6 boneless, skinless chicken breasts
2 tbsp butter
1 cup green pepper, chopped
1 cup celery, chopped
1 medium onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup mushrooms, sliced
2 cups broccoli, chopped
1/2 cup carrots, chopped
1 can (14 1/2 oz) green beans
2 cups shredded four cheese blend
1 pkg, medium sized noodles, precooked
Directions:
Sauté green pepper, celery. and onion in butter until onions become transparent.
Place vegetables in crock pot and add the rest of the ingredients except for the cheese and the noodles.
Cover and cook on high for 7 hours.
Add cheese, stir well, and let cook for 1/2 hour.
Serve chicken over noodles and enjoy.
Peachy Roasted Chicken
Ingredients:
2 3lb broilers, cut-up
1 can peach halves in heavy syrup (drain and save syrup for later)
2 tbsp onion, finely chopped
2 tbsp soy sauce
1/2 cup butter
1 tsp seasoned salt
12 maraschino cherries
Directions:
Preheat oven to 375 degrees.
Place chicken pieces in a large roasting pan, skin side up.
In saucepan, heat peach syrup to almost boiling.
Add chopped onions, soy sauce, butter, and seasoned salt.
Baste each piece of chicken with mixture.
Bake for 1 1/2 hours basting frequently.
When chicken is golden brown and tender place peach halves , hole side up around chicken.
Place a cherry in each hole.
Continue to cook for 8 minutes more, until the peaches are heated through.
Chicken Tips
- Store chicken in the coldest park of the refrigerator.
- You can store raw chicken for two days in the refrigerator.
- You can store cooked chicken in the refrigerator for three days.
- When freezing chicken wrap each piece individually.
- Use foil or freezer bags to wrap chicken for freezing.
- When using freezer bags make sure press all of the air out before freezing.
- If chicken is whole you can safely store in freezer for up to six months.
- Chicken piece can be store in the freezer for 3 to 6 months.
- When thawing chicken do so in the refrigerator or immersed in cold water.
