Delectable tuna and potato patties


2 medium potatoes-Peeled and chopped

1 tuna can- chunks, drained

1 medium onion-chopped

2 eggs-slightly whisked

25g/1/4 cup bread crumbs

1 tablespoon olive oil

Salt and pepper to taste


1.Cook the potatoes in a large saucepan of salted boiling water for 10 minutes or until soft. Drain and cool under cold running water. Transfer to a large bowl.

2.Use a potato masher or fork to mash the potato until coarsely mashed. Add the tuna, chopped onion,eggs and breadcrumbs, and stir until well combined. Season with pepper. Divide the mixture into 8 portions. Use wet hands to shape portions into 8cm/3.5 inches patties.

3.Heat oil in a large non-stick frying pan over medium-high heat. Add the patties and cook for 3-4 minutes each side or until golden brown. Remove from heat.Serve immediately with rice, carrots and or anything green .

      A very nice change from tuna sandwiches! Voted up, useful, interesting, bookmarked, and AWESOME because canned tuna is still way under a dollar in some places. Loading up on more water packed tuna!
