Delicious Stuffed Eggs

Yields: Serves six people

Ingredients

  • 6 eggs
  • 200 grams devon
  • 250 grams Sour cream
  • 500 grams Greek yoghurt
  • 1 tablespoons good quality Mayonnaise
  • 1 teaspoon mustard
  • 1 small onion
  • salt
  • pepper
  • Garnishes parsley
  • Garnishes olives

Instructions - stuffed eggs preparation

  1. Boil eggs for 5 minutes. Make sure you stir them to keep the egg yolks in the middle.
  2. Remove from the stove, cover them and let them cool for 10 minutes.
  3. Remove the shells, cut them in half lengthwise
  4. Remove the yolks and place them into a mixing bowl
  5. Place the egg whites in a serving plate
  6. Mash the egg yolks with a fork
  7. Add the chopped Devon, mustard, 1 tablespoon Mayonnaise, 1 tablespoon Sour Cream, grated onion, salt and pepper
  8. Mix well
  9. Fill the egg whites with this mixture
  10. Retain the mix left for the preparation of the sauce
  11. Preparation of sauce Note: Use the filling mixture left from the egg whites and add: 250 grams Sour cream
  12. Add 500 grams Greek yoghurt
  13. 3 tablespoons of good quality Mayonnaise
  14. Mix well
  15. Add salt and pepper as required
  16. Pour the sauce over the stuffed eggs
  17. Garnish with parsley leaves and / or olives halves
  18. Store them in the fridge for at least 1 hour
