Diabetic Swiss Steak Recipe

Do It Yourself Cube Steak

Cube steak is typically made from round steak, a cut of beef that is tough. This particular piece of meat may be tough but it is one of the most flavorable. It is run through a tenderizing machine by a butcher two to three times to help make it more tender.

You can get the same results by doing it yourself using a wooden meat mallet. Cover each side of the meat with parchment paper and just go to town with the mallet. Not only can you pound your way to more tenderness you can also get out your aggressions. Make sure you tenderize both sides of the meat.

This all begs the question of why would you go to such trouble to tenderize meat when you can buy it already tenderized. You can buy the round steak for much less than the cube steak. I love to save money

Yields: Serves 6 people

Ingredients

  • 2 tbsp. Soy flour
  • 1/2 tsp. dried thyme, crushed
  • 1/4 tsp. paprika
  • 1/4 tsp. oregano, crushed
  • 2 lbs. cubed steak
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. steak sauce
  • canola oil cooking spray
  • 2 tsp. pre-cut garlic
  • 2 medium sized celery stalks, sliced thinly
  • 2 medium sized white onions, sliced thin
  • 4 Roma tomatoes, sliced thin
  • 1 (8 oz. can) mushrooms, bits and pieces
  • 1/2 cup low sodium beef broth
  • 1 tsp. sea salt

Here Are The Simple Instructions

  1. Blend together flour, thyme, paprika, oregano, and salt. Dip cube steak piece in Worcestershire and steak sauce then dredge through flour mixture.
  2. Spray a large frying pan with cooking spray and add steak pieces. Cook at least 5 minutes on each side on medium heat.
  3. Place steak into a crockpot, Top with the rest of the ingredients. Cover and cook for 8 hours on low or 4 hours on high.
  4. It makes a wonderful gravy that I serve over brown rice. Add a vegetable such as corn or green beans and you have a wonderful, nutritious, delicious dinner.

Diabetes and Protein

I recently was diagnosed with Diabetes Type 2. What a shock. It was a totally unexpected event. Not knowing anything about the proper way to eat when diabetic, it started me scrambling for directions or instructions on how to do this.

I searched the internet and found some really helpful information. For instance, when diabetic you need more protein in your diet than those who are not. It is important to get 100g of protein in your diet.

It begged the question - How will I get this much protein in my diet when most people typically only get 16 - 20g a day?

What Is The Best Protein For Diabetics?

Now that we know we need this extra protein, where is the best place to get it?

The most important thing to look at when choosing a protein to introduce into your diet is the amount of fat and cholesterol that is also in that protein.

Most protein foods also contain carbohydrates and fats. How do you know what foods to eat.

I will try to help you along by providing a chart of foods with their protein amounts along with their fat and carbohydrates.
