Diet Vegetable Soup with a Secret Ingredient

This soup can be eaten several times a day when you get hungry. In fact, the more you eat the more weight you will lose if you substitute this soup for your regular meal. Combine all ingredients in a 10 qt. slow cooker. Cook on low for 8 hours, or on high for 4-5 hours, or until carrots are tender.


3 - cups carrots, diced

2 - cups celery, diced

2 - cans diced tomatoes (Italian, Mexican or any spice flavor you may like)

2 - 14.5 oz. cans organic chicken broth

1 - 14.5 oz. can organic beef broth

1 - green pepper, diced

1/2 - bunch green onions, chopped

1 - 14.5 oz. can green beans

1 - 4 oz. can mushrooms, optional

1 - 2.25 oz. can black olives, optional

1 - teaspoon parsley

1 - teaspoon tarragon

Salt, pepper, hot sauce, worcestershire sauce, or curry powder can be added for flavor.

Secret Ingredient: When you cook with acidic vegetables, such as tomatoes, they tend to over-power the flavors of the rest of your vegetables. To lower the acid levels in your soups, and allow for all flavors to come through, add 2-tablets of original alka-Seltzer. This can be used in any soups or stews that have a high acidic content. Adding alka-Seltzer to your soups isn't a magic ingredient for weight loss, but it sure does make the soup taste better.

This soup has been used in several diets. I make a batch and eat it for lunch at least five days a week.
