The year is quickly coming to an end and I can't believe that there are only two holidays left! Speaking of holidays I am so excited to share this recipe with you because I think it would be a great side dish for Thanksgiving. Besides the turkey I always look forward to a large serving of potatoes. Usually I make mashed potatoes or if I am going to a pot lucky style dinner or a friends-giving I make potatoes au gratin. These potatoes from the Blue Bayou are potatoes au gratin kicked up a notch. I have so many memories eating there for various occasions at Disneyland and the food is always amazing! If you've never been there before trust me when I say it is THE best restaurant in Disneyland. These potatoes typically come as a side to the filet mignon but sometimes they switch it up and pair it with other things. They are savory and cheesy and have a nice little kick to them! They are perfect for cool fall nights and even into winter they are a really good side dish. I hope you enjoy making them and eating them as much as I do.

All ingredients: thyme, salt, potatoes, parmesan cheese, onions, jalepenos, heavy cream, garlic, chicken base

  • 1 onion, julienned
  • 1 tbs., butter
  • 3 lbs. yellow potatoes, peeled and sliced thin
  • 2 cups heavy cream
  • 1 tbs. salt
  • 1/8 tsp. ground white pepper
  • 1/4 tsp. ground thyme leaves
  • 2 tbs. minced garlic
  • 1/8 cup jalepenos, diced
  • 1/8 tsp. chicken base
  • 1/2 cup parmesan cheese, grated


1. Preheat your oven to 350.

2. Sauté onions with butter until browned and translucent.

3. Mix sliced potatoes with onions and put in a buttered baking dish.

4. Mix the cream, garlic, salt, pepper, jalepenos, chicken stock, and thyme together. Blend until smooth.

5. Pour mixture over potatoes and mix until combined.

6. Cover dish with foil and bake for 2 hours.

7. Remove foil and sprinkle with parmesan cheese.

8. Wait for cheese to melt and serve while hot.

A few tips!

  • Slice the potatoes last this way they don't turn brown while you are measuring everything else out.
  • To julianne the onions, you just cut them thin on a diagonal. They don't have to be perfect (mine aren't) but just try to make them all similar in size so they cook at the same rate.
  • After I took my potatoes out of the oven and added the cheese I put the dish back in the oven to help melt the cheese.
  • Parmesan is a heavier cheese and it doesn't melt like other cheeses, so don't panic if it turns into a crust rather than gooey melted cheese.
  • Make sure you butter your pan throughly this way nothing sticks and you will get a nice brown crust on all the edges.
  • I didn't have any white pepper on hand so I used black pepper instead.

I love eating at the Blue Bayou especially when the weather gets colder. You really cant beat the ambiance and I can never resist waving at people on the Pirates ride. Sadly, it is really expensive to eat there and it is really popular so getting in sometimes is really hard. Also, I am not at Disneyland everyday to eat there. I have been looking for recipes to the Blue Bayou for a while now but they are harder to find than most. I love having the various Disney recipes at home to make when ever I am in the mood for something and I am so excited that I found this recipe! I can not wait to make this again for Thanksgiving. I think it will be a great addition as an "adult" side because it has a kick to it and most kids don't like that. I think everyone will really enjoy it plus it will taste delicious with turkey!
