Domestic Methods of Fruits Preservation in India.( Can go with any hard drink )
We have to preserve any fruit keeping its nutritive value with out allowing it to go any changes so that it will be fit for human consumtion.The comon enemy for all fruits are the bacteria,yeast and moulds.These micro organisms must be avoided and that is possible if we can stop the activity of these micro organisums,there are various methods to do it domestically a tradition of mother to daughter handed down in few families.These methods are:-
Heat rocessing,Dehydration,Freezing,Use of Sugar and few chemical preservatives.
We now make GRAPE CRUSH:
1 ) Select farm fresh Good Grapes Balck and Juicy.
2 ) Remove the Stalks and wash all the fruits in good water as running tap water.
3 ) Take all the Fruits in a vessel and crush them well with the help of a fruit crusher and boil them for 7 minutes or 10.This makes the Juice retain its color and more Juice is produced.
5 ) When the Boiling is completed use a strainer and strain all the Juice.
6 ) Weigh the Juice and if it is say 1 Kg use the following recipe:-
a) Strained Juice = 1Kg say 1 liter.
b) Take Sugar twice the weight of Juice that will be 2 Kg.
c) Take Water (Filtered) 1 Kg.
d) Citric Acid - 5 tea Spoons say 20 gms.
e) Grape Essence equal to (d)
f)Sodium Benzoate - One and quater tea spoon.
7) Take Sugar,Water and Citric Acid in a SS vessel and heat to desolve Sugar and Citric Acid and filter this Sugar Syrup.
8 ) Mix the Fruit Juice and Sugar Syrup throughly and allow it to cool.
9 ) When this mixture is cooled add the Grape Essence.Now add the mixture of Sodium Benzoate dissolved in warm Water kept prepared to this and add Crush ( 8 ).
10 ) Mix the Crush well and pour it in to a sterilized 1 liter capacity bottle and allow an Inch of Space below the Cap of the bottle use a Cork and store in a cool dry place in your Bar.
3 Cups of Water in 1 Cup of this home made Juice is your Drink.
