Ingredients

  • 175 g Butter, Melted
  • 1 1/3 cups Dark Brown Sugar
  • 1/2 cup Caste Sugar, Superfine
  • 2 tsp Vanilla Extract
  • 1 Egg
  • 1 Egg Yolk
  • 1 2/3 cup Self-Raising Flour
  • 2 tbsp Unsweetened Cocoa Powder
  • 175 g Chocolate Chips

To Serve

  • 1 litre Vanilla (or Ice Cream of your choice) Ice Cream Log

Method

  1. Leave the Ice Cream out of the freezer for 15 mins to soften then scoop it onto a large sheet of cling film.
  2. Form it into a log shape and roll it in the cling film then freeze for 1 hour or until firm.
  3. Pre heat the oven to 170°C and line 2 baking sheets with greaseproof paper.
  4. Cream together the two sugars, butter and vanilla extract until pale and well whipped then beat in the egg and yolk, followed by the flour, cocoa powder and chocolate chips.
  5. Drop tablespoons of the mixture into the prepared trays, leaving plenty of room to spread.
  6. Bake the cookies in batches for 12-15 mins or until the edges are starting to brown, but the centres are still chewy.
  7. Transfer to a wire rack and leave to cool completely.
  8. When you're ready to serve, cut the ice cream log into 18 slices and sandwich each one between two cookies. !!!ENJOY!!!
