Double Chocolate Zucchini Muffins

Some of the best muffins I have ever had! If you like zucchini then you will LOVE this recipe!

Yields: 2 dozen muffins


  • 1 cup Sugar
  • 3 Eggs
  • 1 cup Vegetable Oil
  • 3 cups Zucchini, shredded
  • 2 teaspoons Vanilla
  • 3 cups Flour
  • 2 teaspoons Baking Soda
  • 1/2 tablespoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/4 cup Cocoa Powder
  • 1/2 teaspoon Salt
  • 2 cups Chocolate Chips


  1. Preheat oven to 350 degrees F. Grease 24 muffin cups. Whisk sugar, eggs, oil, zucchini and vanilla in a large bowl.
  2. Combine flour, baking soda, baking powder, cinnamon, salt, cocoa and chocolate chips in a medium bowl; mix well.
  3. Add the flour mixture to the zucchini mixture a little at a time until just blended.
  4. Spoon batter into prepared muffin cups. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.


- You should never beat muffins or breads with an electric mixer. This is because the flour in these products is delicate and will loose its fluffiness if beaten too long. Whenever you have flour in a recipe you should be careful not to mix it too much. Always mix until everything is just blended and with a wire whisk or spoon.

- For perfectly round muffin tops that will not spread when baked, grease the bottom and only halfway up the sides of each muffin cup.

- For an interesting glaze on the top of the muffins try this: mix 2 cups of confectioners' sugar and 3 tablespoons of orange juice. Lightly brush onto the tops of the finished muffins.
