'EGG WINIFRED': Move over Egg an Chips - A New Dish has arrived!

Mixing It Up:


A Hard Days Night

IT'S BEEN A HARD DAYS NIGHT and don't you just love it when all you have in the fridge is a box full of eggs. That and an almost empty food cupboard, with a veg or two lingering therein.

In mine, a handful of sweet potatoes and a half empty box of eggs!

So, wasting no time and got to thinking...of what to rustle up. Something healthy and filling?

That something, turned out to be a variation of the classic (and oh so healthy) Egg and Chips and, possibly a new dish to boot, so I promptly named it 'Egg Winifred' (don't ask me why).

About the sweet sweet potato...

'Wake the Town and tell the people... native to the tropical regions in the Americas, with more than 1,000 species (Wiki), The sweet potato is a large, starchy, sweet-tasting, tuberous root vegetable, distantly related to the potato, and the UK loves them!

The seeds are available to grow your own! -


  • Wasted no time and got me .... 2 (or more) Eggs & - 4 (or more) Sweet Potatoes, (per Person)
  • sea Salt, A pinch for each person
  • Pepper, en peu
  • Suace, (Tomatoe or other)

The Off..

PREHEAT THE OVEN TO - 200ºC/400ºF/GAS 6. Wash 2 large sweet potatoes under cold running water, scrubbing well with a scrubber to get rid of any dirt and peel (or not to peel, its your choice)..

Then, CUT EACH SWEET POTATO in half lengthways, cut each half in half lengthways, then each piece in half again ending up with at least 8 wedges

And, ADD these to a large mixing bowl, then sprinkle over a tiny pinch of sea salt and black pepper, and ½ a teaspoon of Paprika

With a DRIZZLE of, a tablespoon of olive oil, tossed everything together to coat

And, PLACE IN a single layer on a baking tray, And bake for 35 minutes, or until browned and cooked through.

Healthy Eggs

Then, get ready to fry them eggs.

There are healthy ways to fry can avoid 'the extra fat' of cooking in oil or butter by using an oil spray or a nonstick pan.

But do fry the eggs gently (so that the yolk cooks thoroughly) and the sweet potato chips should be ready.

So have yourself an Egg Winifred!


The Universal Appeal Of Eggs

It goes without saying that eggs rock all over the world...not only here in the UK - from Ireland to West Africa to China, Mexico to Scotland here's some of the egglicious dishes from around the globe..

Eggs Fitzpatrick: boiled egg in a cup (Ireland)

Eggs Neptune: (A variation of Eggs Benedict) with crab meat replacing bacon

Eggs Ritake – (Another variation on Eggs Benedict), replacing the ham with smoked salmon

Gari Foto: (West Africa) Savoy Gari and eggs

Eggs in Purgatory: (Uova in Purgatorio) Baked eggs in tomatoe sauce topped Eggs in Purgatory which is a strange way of saying eggs poached in tomato sauce (Italian)

Nicoise Deviled Eggs: Mashed hard boiled eggs with tuna, olive oild chopped parsley and a splash of lemon juice topped with sliced olives and tomatoes. (France)

Egg Foo Yung (China) – Egg Foo Yung is a Chinese version of an omelette, and lends itself to myriad of fillings. Enjoy with bean sprouts and green onions, or try adding beef, pork, or even tofu for even more protein.

Huevos Rancheros (Mexico) – Huevos Rancheros, “ranchers eggs,” are a simple Mexican breakfast. Sunny side up eggs top refried beans, salsa and sour cream, layered on a flour tortilla and a splash of hot sauce to taste.

Eggs Bhuru (India) – This egg dish is popular in Northern India served with naan bread or roti. Enjoy for brunch or a weeknight dinner with red chili paste, ginger, and curry seasonings.

(Scotland) Scotch Eggs - Hard boiled eggs wrapped in sausage meat and coated in breadcrumbs, then baked or deep fried. A British classic, enjoyed as appetizers, lunch snacks or an afterschool finger food!

Stracciatella Soup (Italy) – This simple “egg drop” soup rustled up in less than 15 minutes!

Spanish Omlette (Spain) – The Spanish omelette is a traditional Spanish egg dish made in a skillet with potatoes, garlic, red pepper, onion and more.

Avgolemonmo (Greece) – Avgolemono soup. A classic and simple Greek dish made primarily of egg, lemon juice, and chicken broth.

Why Winifred?

So, from coddled eggs, to devilled eggs (Italy), Egg Foo Yung (Chinese) to Egg Fitzpatrick (Irish), who doesn't love an Egg dish.

So, mused around and came up with a name for this coupling and the Egg Winifred was born.
