El Paso Lunch on the Barbecue
That was part way through cooking.
First thing I did before firing up the grill (plugging into the inside wall outlet since there is no outside plug but building rules are electric barbecues only, kind of dumb really but management can be like that some times) was to spray the new topper with Spam cooking spray.
Then I went into the kitchen for some ingredients to make something for lunch.
So the El Paso lunch was created.
Ingredients
- 1 Yukon Gold Potato, cut into thin pieces
- 1/2 apple, cut into thin pieces
- 1 smoked sausage, cut into thin pieces
- 1/2 onion, cut into thin pieces
- some cinammon, ground pepper, fresh basil, ripped into small pieces or shaken or ground from a mill
- some olive oil, wet it down a little for added flavour
Throw it all on the grill topper
Cook on medium heat turning it with a flipper with the cover down until it looks done. Next time I will cut up a garlic clove or two and add that. Maybe buy a bell pepper but just one. They always sell them like by the 1/2 or 1/4 dozen. Buying food for one is tricky just like the math test here that some are still trying to figure out. (6 or 3. did you get a DOH buzzer on that or you figured it out? Good for you)
I could have made it Sausage, Onion, Apple and Potato lunch but who wants to eat soap anyway. (El Soap doesn't sound really tasty for sure)

She was a great lady, I wish she was around so I could have made this for her. Might make up for some of what she did for me. Like .0000000000000000000001% of what I owe her for what she did for me. Love ya and wish you were here.
