A New Recipe is Born

One day, while I was trying to make coleslaw for dinner, I realized that I did not have my usual coleslaw dressing. I was bummed because I needed to use up the coleslaw mix or it would go bad. Scrounging around in the fridge, I improvised and came up with this recipe. It looks the same, but tastes amazing. Everyone thought that it was better than my usual recipe. Hope you like it!

Yields: 12 half cup servings

Ingredients

  • 1 bag coleslaw mix
  • 1 cup Ranch dressing
  • 1/4 cup onion, diced
  • 1 avocado, diced
  • 1 cup French's Fried Onions
  • pepper, to taste
  1. Place Coleslaw mix in bowl.
  2. Add chopped onions and avocado.
  3. Pour on Ranch Dressing and mix. Add pepper to taste.
  4. Top with fried onions.
  5. Enjoy!

Some variations

While we were eating this, we were thinking of ways to add to it. Some ideas were adding sliced radishes and pea pods or topping it with crumbled croutons. Placing chips on top was also mentioned (by my kids!!!).

Sliced or diced pickles work in this as well - they add a little punch to the slaw. Using a red cabbage mix with diced broccoli is another variation.

You can also mix it with Poppyseed dressing instead of the Ranch. If you want to add salt, that is fine too. We do not like too much salt, so I usually omit it in my recipes. I figure that you can always add it later.
