Growing up in Texas, I ate my fair share of both barbecue and beef. After growing up and moving out of my home state, I began to search for a replacement meal. Although this recipe isn't a dry rub, nor is it cooked over night in a smoke house, it almost makes the cut.

This recipe can be made three different ways (all easy), so it can fit in any lifestyle.

3 lbs. boneless beef short ribs, cut into small pieces
2 Tablespoons olive oil
1 Cup ketchup
1/3 Cup brown sugar, firmly packed

2 Tablespoons lemon juice
1 Cup onion, chopped
1/2 Cup water
3 Tablespoon Worcestershire sauce
1 tsp cayenne
1 tsp garlic powder
1/2 tsp celery salt
1/2 tsp thyme
1/2 tsp smoked paprika

This recipe can be made a few different ways.

Crock Pot

  2. Place ribs in a slow cooker, cover with spices, then add liquid ingredients.
  3. Cook on medium-high for about 2 hours, or until the meat is cooked throw and can be easily shred.

Oven

  1. (optional) Warm olive oil in a cast iron skillet, or any medium to large skillet. Then sear the ribs on all sides.
  2. Place ribs in cover baking dish.
  3. Rub spices into the ribs.
  4. Add the liquid ingredients.
  5. Cover with lid or foil, and bake at 350 degrees for one and half to two hours, or until the meat is tender enough to shred.

Dutch Oven

  1. Warm olive oil in a cast iron skillet, or any medium to large skillet. Then sear the ribs on all sides.
  2. Drain fat.
  3. Add remaining ingredients.
  4. Cover and bring to a boil over medium-high heat, then reduce to medium-low and simmer for 1 1/2 to 2 hours until the meat is cooked thoroughly and can be easily shredded.

What to serve with the sandwiches

These sandwiches can be part of a healthy meal, it all depends on serving size and what you serve with them. You serve up a pile of fried french fries, or potato chips and it becomes a standard fatty meal.

However, if you serve the sandwiches with a fruit salad, a green salad, or baked green beans it becomes a healthy filling meal that is neither hard on your waist line or your wallet.
